Tuesday’s Treat is here! Remember when I announced this on Saturday’s post? Aside from other posts throughout the week, Tuesday’s and Sunday’s will now be dedicated to specific tastes! You can always stop by on Tuesday’s for a treat, and on Sunday’s for a savory meal idea. Happy cooking (or baking), my friends!
To kick off Tuesday’s Treats, I give you a delicious protein-packed pancake recipe that is sure to start your morning off right! With a mild espresso flavor and mini chocolate chips, you really can’t go wrong.
- 2 ripe bananas
- 2 organic eggs
- 1 scoop vanilla protein powder
- 3 tbsp gluten-free flour of choice (coconut flour, gluten-free pancake flour, etc.)
- 2 tsp instant espresso (use 3 for bold flavor)
- 1/2 tsp vanilla
- 1/4 cup enjoy life's chocolate chips
- 1/2 tsp baking powder
Optional Espresso Maple Syrup
- 1/2 cup pure maple syrup
- 2 tbsp strong coffee
