TUESDAY TREAT from Lexiscleankitchen.com To kick off Tuesday’s Treats, I give you a delicious protein-packed pancake recipe that is sure to start your morning off right! With a mild espresso flavor and mini chocolate chips, you really can’t go wrong.

Ingredients
  1. 2 ripe bananas
  2. 2 organic eggs
  3. 1 scoop vanilla protein powder
  4. 3 tbsp gluten-free flour of choice (coconut flour, gluten-free pancake flour, etc.)
  5. 2 tsp instant espresso (use 3 for bold flavor)
  6. 1/2 tsp vanilla
  7. 1/4 cup enjoy life's chocolate chips
  8. 1/2 tsp baking powder
Optional Espresso Maple Syrup
  1. 1/2 cup pure maple syrup
  2. 2 tbsp strong coffee
Instructions
  1. 1. Combine all ingredients, except for chocolate chips, in blender until smooth
  2. 2. Add chocolate Chips
  3. 3. Spray pan and pour out pancake batter
  4. 4. Cook on medium/low heat and flip once pancakes begin bubbling
  5. 5. Serve hot with {optional} grass-fed butter and pure maple espresso syrup
Notes
  1. If batter is thinner then desired, add 1 additional tbsp of flour
