Chocolate Chip Espresso Pancakes

TUESDAY TREAT from Lexiscleankitchen.comTo kick off Tuesday’s Treats, I give you a delicious protein-packed pancake recipe that is sure to start your morning off right! With a mild espresso flavor and mini chocolate chips, you really can’t go wrong.

Chocolate Chip Espresso Pancakes {Gluten-free, dairy-free}

Ingredients

  • 2 ripe bananas
  • 2 organic eggs
  • 1 scoop vanilla protein powder
  • 3 tbsp gluten-free flour of choice (coconut flour, gluten-free pancake flour, etc.)
  • 2 tsp instant espresso (use 3 for bold flavor)
  • 1/2 tsp vanilla
  • 1/4 cup enjoy life's chocolate chips
  • 1/2 tsp baking powder

Optional Espresso Maple Syrup

  • 1/2 cup pure maple syrup
  • 2 tbsp strong coffee

Instructions

  • Combine all ingredients, except for chocolate chips, in blender until smooth
  • Add chocolate Chips
  • Spray pan and pour out pancake batter
  • Cook on medium/low heat and flip once pancakes begin bubbling
  • Serve hot with {optional} grass-fed butter and pure maple espresso syrup

  • If batter is thinner then desired, add 1 additional tbsp of flour
