Lemon Poppy Seed Protein Pancakes

By now you probably can attest that I love pancakes. I also love minimal and healthy ingredients. Those two combined? A favorite combination for sure.


Now that it’s December and it’s getting really cold outside I find myself craving a warm comforting breakfast with a hint of refreshing summer-y flavor…





Hello, refreshing! I love anything lemon-poppy seed, especially breakfast. 



Lemon Poppy Seed Protein Pancakes
Serves 3
Write a review
  1. 2 Ripe Bananas
  2. 2 eggs
  3. 2 scoops protein powder {Use code Lexi for 10% off orders}
  4. 1 tsp baking powder
  5. Juice from 1 lemon
  6. 1 1/2 tsp poppyseeds
  7. 2 tbsp flour of choice
  1. 1. Combine all ingredients until smooth
  2. 2. Spray pan and pour out pancake batter
  3. 3. Cook on medium/low heat and flip once pancakes begin bubbling
  4. 4. Serve hot with {optional} grass-fed butter and pure maple syrup
