I am a huge fan of sweet potatoes so, this week for Healthy Food Friday with American Express, I thought I’d show you just four of my favorites! And since I love them prepared so many different ways, I added a big round-up for you featuring tons of other favorites of mine!
Sweet Potatoes are a healthy carbohydrate. They are packed with nutrients, antioxidants, and anti-inflammatory properties. AND, they are delicious. Like seriously delicious.
I asked my Instagram followers earlier this week their favorite ways to eat them, and there were TONS of responses that I hadn’t even thought of myself! Here are a few of my go-to’s!
Shoe String Sweet Potato Fries or Sweet Potato NOODLES: Using your spiralizer, spiralize 1 large sweet potato creating long noodles. For the fries, gently toss with oil, sea salt, and optional garlic, parsley, and pepper. Bake for 15-20 minutes on 400 degrees. For noodles, sauté with grass-fed butter or olive oil until lightly tender. Serve with any pasta dish!
Sweet Potato Sandwich Buns: Preheat oven to 350. Slice sweet potato in 1/4-1/2 inch thick slices. Drizzle with oil of choice, and sprinkle with Himalayan sea salt (I often sprinkle with cinnamon, too). Bake for 15 minutes until soft but tender. See details here.

Sweet Potato Fries: Preheat the the oven to 375 degrees. Cut sweet potato into desired wedges. In a small bowl, coat with oil, sea salt, and seasoning of choice.Place a small rack on baking sheet *TIP: Baking sweet potatoes on a rack will allow all sides to get crispy. Bake for 45 minutes, flipping at 20, or until crisp. More details here.
