Mini Deep Dish Pizzas

Tailgating season is here… AKA Sunday football in my house (with me nowhere near the TV). I like the Super Bowl because well… it’s a party, and I love having everyone over weekly, but I like to park it in the kitchen and have lots of taste testers! Not the biggest football aficionado.

Mini Deep Dish Paleo Pizzas

Ingredients

Toppings

  • Muir Glen Pizza Sauce
  • Fresh Mozzarella
  • Fresh Basil
  • Dash garlic granules
  • Pepperoni

Instructions

  • Preheat oven to 350
  • In a mixing bowl combine tapioca, coconut flour, baking powder, salt, garlic, Italian seasoning, and flax
  • Add in warm water and mix well
  • Add in palm shortening and egg; mix well
  • Grease a muffin tin and pour pizza batter in half way
  • Bake for 8-10 minutes until a toothpick comes out clean
  • Remove from the oven, add toppings, and bake for an additional 5 minutes
