Lexi's Weekly Dinner Plan (Week 2)

Monday: Loaded Turkey Meatballs over Zucchini Linguine

Tuesday: One Pan Fiesta Chicken and Sausage

Wednesday: Chicken Milanese

Thursday: Easy Cioppino Stew

Friday: Leftovers

Saturday: Out

Sunday: Butternut Squash Curry Soup

As always, you can mix up the days you eat these on depending on what you are in the mood for, how busy you are, and so on!

  • Hi. I’m excited to start! I can’t take almond and coconut flour. I do have tapioca flour but sometime I see a recipe that says 1cup tapioca flour and
    3 tbsp coconut flour. So what other flour should I replace coconut flour or add tapioca flour again?

  • Week one was fantastic! It encourages my family and I to try new things too like kale and new squash! I hope you continue this after January. It’s delicious, cost effective and makes dinner planning easy PLUS has encouraged me also to prep for breakfast and lunch, which is really where I was lacking too. Thank you!

  • These meal plans are great! I have noticed though a couple of missing ingredients that aren’t listed on the grocery list. For example, black beans and frozen spinach weren’t on the grocery list but were in the recipes. Also, it would be great if you could list the total amount needed for each item on the grocery list. For example, “3 onions” or “2 cups chicken stock” so that way we know how much of each item to buy. I’m sure this is a ton of work for you though so I appreciate your hard work and can’t wait to use more of your meal plans!
