I am so excited to partner with my friends at Pacific Foods to bring you today’s recipe. I love to lighten up dishes with their coconut milk instead of using canned coconut milk! It makes the dish, or cocktail, lighter, while still being super creamy!

Rosé (my favorite one is this), a little honey, frozen strawberries, and lemon makes this rosé perfection.  I’ve known about the frosé trend for some time now but hadn’t tried it until recently, and I am officially hooked!

Earlier this month I was in the Hampton’s for an amazing retreat that I hosted with Liz from The Lemon Bowl and Gina from Skinnytaste. We had such a blast — which you’ll read more about very soon!

French Kiss Cocktail

Tomorrow night is New Year’s Eve and whether you lay low or spend the night out on the town, a light cocktail is always a nice way to start off the evening. I like this French Kiss Cocktail because you can make it sweet (or less sweet), simply by adjusting the champagne or wine you use!

French Kiss CocktailCheers to a new year!

Ingredients

  • 1 bottle Champagne, Prosecco, or Moscato wine
  • 1 package organic raspberries (can sub your favorite berry)
  • 8 mint leaves
  • 1/2 lemon
  • Gluten-free vodka (I like Tito's or Ciroc)

Optional

  • 1/2 tsp raw honey
  • 1 tsp chambord liquor

Instructions

  • Place 5 berries in the bottom of your champagne glass
  • Add 2 mint leaves
  • Using a spoon, muddle raspberries until slightly mashed, but somewhat whole
  • Fill up glass with Champagne, Prosecco, or Moscato wine
  • Add a dash of vodka
  • Add a dash of lemon juice
  • {Optional} Add a 1/2 tsp raw honey/1 tsp chambord
  • Recipe Notes

  • For a sweeter cocktail, try using moscato wine. If you prefer a champagne cocktail, adding a hint of raw honey or chambord is a nice sweet touch.
