I am always on the lookout for delicious dairy-free recipes and wanted to compile some of my favorite dairy-free recipes that you should add to your must-make list ASAP! These dairy-free recipes are so delicious, you won’t miss the dairy one bit!

Now that I am back from traveling this past week, I am getting back into the swing of things with these healthy recipes that are delicious and perfect for any night of the week!

Classic Lobster Bisque

I have been wanting to make a homemade Classic Lobster Bisque for so long now and I am SO HAPPY that I did! This Classic Lobster Bisque is so creamy, flavorful, and surprisingly simple to make. A must-make if you love lobster!

Living in New England, Summer means lobster rolls, lobster bisque, and all things lobster! Though a warm dish, lobster bisque still screams summer to me!!

And I quote from my trusty taste tester husband, “This might be the best lobster bisque I’ve ever had!”

Where we buy lobster: We go to local fish markets to get our lobster! I like supporting local business owners, and I often find the quality to be superior. Also, you can usually buy cooked lobster meat out of the shell, which saves lots of time and effort when making your own lobster bisque!

I always save extra lobster to garnish and look fancy! I mean, just look at how amazing this looks! Make it classic with local, good quality heavy cream, or opt for a dairy-free version!

Classic Lobster Bisque

Preparation 10 minutes 2017-06-26T00:10:00+00:00 Cook Time 25 minutes 2017-06-26T00:25:00+00:00 Serves 4     adjust servings

Ingredients

  • 1 teaspoon avocado oil
  • 1 shallot, minced
  • 2 cloves garlic
  • 1/4 cup fresh portobello mushrooms, sliced
  • 1/4 cup onions, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup carrot, chopped
  • 1/4 cup dry white wine
  • 1/8 teaspoon hot sauce of choice, we love Frank’s RedHot Original!
  • 1 teaspoon fresh or dried thyme, if using fresh thyme set aside more for garnish
  • 1/2 teaspoon sea salt, more salt to taste
  • 1 teaspoon black pepper, more to taste
  • 2 cups fish stock (or chicken stock)
  • 1 tablespoon tomato paste
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon paprika, more to taste
  • 1 1/2 cups good quality heavy cream, or 1 cup dairy-free substitute (see notes)
  • 3 tablespoons butter
  • 1/2 pound cooked lump lobster meat
  • 2 tablespoons Parsley for garnish

Instructions

1.In a saute pan, heat oil over med-high heat and sauté shallots, onions, and garlic for one minute. Add the celery, carrots, and mushrooms. Cook for 5-8 minutes until mushrooms have browned and the carrots have softened.
2.Deglaze the pan with the white wine. Cook for 2-3 minutes.
3.Add the hot sauce, thyme and salt and pepper. Saute for another minute.
4.Add the paprika, cayenne, and broth - mix well
5. Stir in tomato paste. Pour into a high speed blender, and blend until creamy.
6. Pour bisque into a medium-sized pot and simmer over low heat for 10-15 minutes.
7. Whisk in heavy cream and butter and bring to a boil over high-heat.
8. Lower the heat to a simmer and add in lobster. Cook for 2-3 minutes until lobster is warm.
9. Serve hot topped with parsley and fresh thyme.

Recipe Notes

*If you don't have a high speed blender, make sure to blend the soup long enough to reach a creamy consistency.

*Dairy free substitute: 1/2 cup cashews soaked for at least 4-6 hours, 1/2 cup water. Blend soaked cashews with water until smooth and creamy. The cashew cream will be thick. Use 1 cup of the cashew cream in place of the heavy cream in step 7. If re-heating the dairy-free soup, you might need to add more stock to thin the consistency out.

Chicken Marsala

One Skillet Chicken Marsala (Gluten-Free) - Lexi's Clean Kitchen

Growing up, Chicken Marsala was a staple in our house. My Mom made it often, and I never ever got sick of it! I am so excited finally share this cleaner and healthier version with you made with no white flour and made in ONE PAN. Serve it over gluten-free pasta or completely on its own!

I am so excited to partner with my friends at Pacific Foods to bring you today’s recipe. The Organic Chicken Broth is a staple in my pantry! It adds such a great flavor to sauces, soups, and even when cooking rice. I even use it in the slurry used to thicken this dish instead of water!

The flavors from the ‘breaded’ chicken, caramelized mushrooms, and Marsala reduction sauce make for a delicious take on this Italian-American classic! Paleo-friendly, gluten-free, and you only need ONE-PAN!

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1/4 cup arrowroot flour
  • 1 teaspoon fine sea salt, more to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter, more if needed
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 1 8 ounce container mushrooms, cleaned and sliced (1 1/2 cups)
  • 1 cup dry marsala wine
  • 1 cup Pacific Foods Chicken Broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon dried thyme, or 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt, more to taste
  • 1 teaspoon pepper, more to taste
  • Pinch red pepper flakes, more to taste
  • Fresh parsley, for garnish

Slurry

Instructions

  1. Place arrowroot flour in a wide shallow bowl and set aside. Place chicken in a plastic bag, and using the flat side of a meat pounder or a rolling pin, gently pound chicken to 1/4 inch thick.
  2. Pat chicken dry and season with salt and pepper. Dredge chicken in the arrowroot flour, shaking off the excess flour. Transfer to a plate. Make sure there is a good amount of space between each piece of chicken on the plate.
  3. In a skillet heat 2 tablespoons butter and add chicken to the skillet. Working in batches, cook until brown on both sides, about 3 minutes per side. Transfer to a plate lined with paper towels and set aside. Add more butter between batches if necessary.
  4. In the skillet, add mushrooms and cook, stirring frequently, until mushrooms have released their juices and browned. Should take about 8-12 minutes. Add shallots and garlic and sauté for 2 minutes. Add more butter to the pan if needed.
  5. Add the masala wine and bring to a boil for 1-2 minutes, letting the alcohol burn out. Pour in the chicken broth, lemon juice, thyme, red pepper flakes, salt, pepper and the slurry. Let cook down for 2-3 minutes.
  6. Place chicken back in the sauce. Simmer for 10 minutes. Garnish with fresh parsley and serve hot over rice, pasta, or on its own!
