For one of our dinners, we decided to stay in and we hired Chef Renee Blackman, a super talented chef who was also on Food Network’s CHOPPED! We knew she was the right fit and could make a creative, Instagram-worthy meal for us!

I made a few swaps to the recipe so it would be a perfect fit for all of you, plus I fried up those shallots with a new tip I learned to ensure they fry perfectly without burning!

Watermelon Ahi Tuna Salad

Ingredients

Chili marinade

Everything else

  • 1 lb. sushi-grade tuna
  • 1 shallot, finely sliced

Instructions

  1. Using a very sharp knife, trim away any skin from the tuna fillet. Cut the tuna into 1/4-inch cubes and place in a bowl. Add the chili marinade ingredients, minus the chili paste, to the blender and emulsify. Mix in the chili paste into the marinade then pour onto tuna and add salt to taste at the very end.
  2. Use a mandolin (or a vegetable peeler) slice the cucumbers to be paper thin in the end result. When the cucumbers are sliced, roll them up and set to the side.
  3. Slice the shallots then and then fry them. To fry the shallots: Place 1/4 cup of avocado oil or oil of choice into a small saucepan. While the oil is cold, add in the sliced shallots. Bring to frying temperature (375ºF) and fry until golden. Watch often to avoid burning. Set aside on a plate lined with paper towel until ready to serve. *The key is not heating the oil beforehand.
  4. While the tuna is marinating, cut the watermelon into half-inch cubes (2 cups) and lightly season with salt t o the watermelon to bleed.
  5. Assemble: Add the tuna and place a few watermelon cubes, garnish with shallots and cucumber rolls, top with cilantro and micro greens.

These Chicken Wings with Mango-Chili Sauce are a delicious addition to any Summer BBQ! The Mango-Chili sauce is so tasty with a hint of smoky flavor, and compliments the wings perfectly! Throw them on the grill or in the oven for a perfect appetizer or main any night of the week. These wings are made in partnership with the National Mango Board.

Chicken Wings with Mango Chili Sauce - Lexi's Clean Kitchen

Mangos are a great source of Vitamin C, Vitamin A, and fiber and are a great lower calorie snack at 100 calories a cup! Plus, they are SO flavorful, juicy, and delicious!

These wings lasted about 2 hours in my house. Marinated to perfection with just the right amount of smoky heat, we could not get enough!

I am always on the lookout for flavorful recipes to make for Summer gatherings with friends and family and these wings will definitely be a hit! Blend the sauce, marinate the wings, toss on the grill and devour! The perfect combination of sweet and smoky with just the right amount of spice!

Chicken Wings with Mango-Chili Sauce

Ingredients

Mango-Chili Sauce

Other Ingredients

  • 2 pounds chicken wings (about 24), wingtips removed, or drumettes rinsed and patted dry
  • Kosher salt and freshly ground black pepper
  • Chopped scallions, for garnish

Instructions

  1. Place all of the mango-chili sauce ingredients, except for the chili paste, into a high-speed blender. Puree until smooth. Stir in the chili paste and taste. Adjust seasoning as desired.
  2. Place chicken wings in a large bowl and season with salt and pepper. Coat with 1/2 cup of mango-chili sauce, set the rest of the sauce aside for later. Sprinkle wings with sesame seeds and cover with plastic wrap. Refrigerate for 30 minutes to 1 hour.
  3. Grease a grill or grill pan. Grill the wings for about 5 minutes on each side, or until opaque and fully cooked through.
  4. While wings cook, place reserved sauce in a small saucepan and bring to a boil. Reduce heat to medium-low and simmer for about 5 minutes. If the sauce is too thick, add a few teaspoons of water until the desired consistency is reached. If the sauce is too thin, continue to cook until thick.
  5. Toss chicken wings in 1/4 cup of sauce (or brush sauce on them) and place on a serving platter.
  6. Garnish with chopped scallions and diced mangoes, and serve with remaining mango-chili sauce on the side for dipping!

Recipe Notes

How to cut a mango: Slice off the sides of the fruit, avoiding the large seed in the center. Once you have these two sides, you can get to the flesh and slice or dice as needed. Then simply scoop it out of the skin.

Easy Stir-Fry & Spicy Noodle Soup

For the past number of months American Express and Whole Foods Market have teamed up to bring you additional cash back when you use your American Express Blue Cash card at any WFM location!

I have joined in and have brought you two ways to use one ingredient to go along with the program! In the archives you will find: Sweet Potato, Butternut Squash, and Ham.

This month we have an ingredient that I cannot wait to start using more! Watercress! I am bringing you two delicious ways to use the fresh herb. In my go-to One-Pan Chicken Stir-Fry and in my Spicy Noodle Soup!

First, the soup! Loaded with veggies, spiralized zucchini for the noodles, chicken, and flavors such as mint, watercress, cilantro, sriracha, and ginger.

Spicy Noodle Soup

Ingredients

  • 4 cups Chicken or Beef Broth, homemade or store-bought
  • 1/2 lb. Beef or Chicken, cut into cubes
  • 1 tbsp oil
  • 3 garlic cloves, crushed
  • 1 bunch boy choy
  • 1 onion, sliced
  • 2-3 carrots, diced
  • 2-3 cups zucchini noodles (1 large, or 2 medium zucchinis)
  • 1 tbsp fresh ginger, grated
  • 1/4 cup cilantro leaves, finely chopped
  • 1/4 cup mint leaves, finely chopped
  • 1/4 cup watercress, finely chopped
  • 1 tsp-1tbsp sriracha, based on desired level of spice (can omit)
  • Pink salt, to taste
  • Pepper, to taste
  • Optional: Red pepper flakes, to taste
  • Garnish with 2 tbsp scallions, chopped

Instructions

  • In a large pot heat oil and garlic
  • Add in onions and carrots and cook for 4-7 minutes until onions are soft
  • Add in chicken and let cook until no longer pink
  • Add in bok choy and saute for 2 minutes
  • Add in chicken stock, ginger, cilantro, mint, watercress, and spices
  • Bring to a boil then reduce heat and let simmer for 20 minutes
  • Taste and adjust spices
  • With 5 minutes remaining drop in spiralized zucchini

    Spicy Noodle Soup

    Now, the stir-fry!

    My easy stir-fry is our go-to dinner any night of the week. Have  a ton of veggies? Shrimp? Chicken? Or Beef? One-pan and you are good to go! Hearty, flavorful dinner on the table in under 30. Sign me up!

    Paleo Chicken Stir Fry

    One-Pan Chicken Stir-Fry

    Preparation 8 min 2017-09-20T00:08:00+00:00 Cook Time 20 min 2017-09-20T00:20:00+00:00

    Ingredients

    • 1 lb. organic chicken
    • Veggies of choice-
    • 2 carrots, chopped
    • 1 onion, sliced
    • 1 handful bok choy
    • 1 cup sprouts
    • 1 cup broccoli florets
    • 1 zucchini
    • 2 garlic cloves, crushed
    • 1/3 cup watercress, chopped
    • 2 tbsp scallions for garnish

    Sauce

    Instructions

  • In a pan heat oil and garlic
  • Add in veggies (excluding bok choy or spinach)
  • Let saute for 6-8 minutes
  • Add in chicken or meat of choice and cook until no longer pink
  • Add in spinach or bok choy
  • In a bowl combine sauce ingredients
  • Pour into pan and mix well
  • Bring to a boil then reduce heat and let simmer for 15 minutes or so
  • Taste and adjust spices as desired
