Healthy Avocado Boats: 5 Ways

Ingredients

Scale
  • 1 large ripe avocado (or more, as many as need to make the number of servings you want)

Optional Fillings:

For Baked Egg

  • 2 eggs (or as many as you plan to make)
  • Squeeze of lime juice
  • Pinch of salt
  • Pinch of paper
  • Pinch of paprika

Chicken Salad

  • 1 small cooked chicken breast (about 5 ounces), diced finely
  • 3 tablespoons mayo
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Turkey BLT

  • 1/4 cup diced turkey breast
  • 1 piece of cooked bacon, diced
  • 1/4 cup diced tomato
  • 1/4 cup diced fresh spinach
  • ½ teaspoon lemon juice
  • Salt and pepper, to taste

Mayo Free Tuna Salad

  • ½ (5-ounce) can albacore or yellowfin tuna, drained
  • 1 tablespoon diced cucumber
  • 1 tablespoon diced red onion
  • 1 tablespoon diced red pepper
  • 1 tablespoon diced parsley
  • 1 teaspoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Pico de Gallo with Beans

  • 1/4 cup diced tomato
  • 2 tablespoons cooked and rinsed black beans
  • 1 tablespoon diced red onion
  • 1 tablespoon fresh cilantro chopped
  • 2 teaspoons diced jalapeño pepper
  • 1 teaspoon lime juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

For Baked Egg

  1. Preheat oven to 400ºF.
  2. Cut avocado in half and remove the pit. Scoop out a small portion of the avocado to make room for the egg.
  3. Squeeze a bit of lime juice on top of avocado and place in a baking dish, making sure the avocado halves are secure.
  4. Crack eggs into a bowl. Transfer yolk to the divet in the avocado, and add as much egg white as fits.
  5. Bake in the oven until the egg is cooked as desired, and the white is fully opaque, about 15 minutes.
  6. Sprinkle avocados with a pinch of salt, pepper and paprika and serve.

For Chicken Salad:

  1. Cut avocado in half and remove the pit.
  2. Add all chicken salad ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop chicken salad into the hole created from the pit. Set aside any additional chicken salad for another use.

Turkey BLT

  1. Cut avocado in half and remove the pit.
  2. Add all ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop the BLT ingredients into the hole created from the pit.
  4. Serve.

For Tuna Salad:

  1. Cut avocado in half and remove the pit.
  2. Add all tuna salad ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop tuna salad into the hole created from the pit. Set aside any additional tuna salad for another use.

For Pico de Gallo with Beans

  1. Cut avocado in half and remove the pit.
  2. Add all ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop pico into the hole created from the pit. Set aside any additional pico for another use.
