This beet slaw is a tangy and sweet side dish, filled with farm-fresh beets, scallions, and fresh mint! It pairs perfectly with grilled chicken or salmon, or as an addition to any leafy green salad.

Raw Beet Salad

Confession: I haven’t always been a huge beet fan. It wasn’t until I joined a CSA that I started experimenting with them and have started to take a liking to them! I particularly love raw beet juice and shredded raw beets, so I knew I needed to create some sort of salad with them, and this Raw Beet Salad was born.

This Beet Slaw comes together quickly and is filled with fresh flavors, like scallions, mint and ginger. It also lasts for days on end, and works nicely compared with a lot of different protein options, like salmon, chicken or just about anything you can throw on the grill.

Are Beets Healthy?

Beets are so healthy for you, especially in raw form like this salad! Beets are a powerhouse of nutrition. You know what they say, the more colorful the vegetable, the more nutrition it packs…and beets are certainly colorful!

Beets are high in anti-oxidants, folate and potassium! And even the greens, which are edible, are full of nutrients too, so don’t throw those away.

You can find a variety of beets at farmer’s markets these days, ranging from the more typical red beets, to orange beets or even candy-stripe beets.

Can This be Made Ahead of Time?

Yes. And that’s one of the great things about slaws, they are perfect make ahead dishes. This beet slaw will even taste better the next day! Store this in an air-tight container (preferably glass, so it doesn’t stain) for up to 5 days.

Beet Slaw

Ingredients
  

  • 3 to 4 large raw beets peeled and grated
  • 2 scallion stalks sliced thin (about 1/3 cup)
  • 1 inch chunk ginger peeled and grated
  • 1/4 cup mint chopped fine
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1/3 cup golden raisins
  • 1/3 cup sliced raw almonds
  • Pinch of fine sea salt
  • 1 tablespoon sesame seeds optional

Instructions

  • Add all ingredients to a large bowl and toss to combine. Taste and adjust seasoning.
  • Serve immediately or make ahead and store in an air-tight container in the refrigerator for up to 5 days.

Notes

For vegan sub maple syrup for honey.

  3. I LOVE this recipe! I made it with the pink, Candy Cane, beets which have a lighter, sweeter flavor than regular beets. (We found them at the Farmer’s Market and later discovered that our Publix carries them.) Since we are on the Whole30 I didn’t add the honey or maple sugar and I left the raisins out. We will be making this again! Lexi I really appreciate all of the support you give with your great recipes on Facebook and your blog. I don’t even bother putting your cookbook away because I use it so often.

    I didn’t have to boil the beets they peeled like a potatoe.
