Creamy Green Smoothie

The past week has been SUPER busy. So many exciting things going on I could just scream from holding it all in, but soon you’ll be in on it. Promise. Busy days means sometimes quick meals. The key to this is 1. meal prep and 2. stocking the fridge with good quality eats!

I am all about the smoothies lately and I’ll be even more about them as it gets warmer out (counting down the days until Spring). To be honest, I’ve never really made green smoothies before. You can bet they will be making way more appearances. You don’t actually taste the greens {insert my love confession for my Vitamix here}! I wanted a nutrient-dense smoothie to give me some serious morning fuel and this smoothie does just that. Healthy fats, carbs, and protein. Win, win, win.

    • Looks delish Lexi! I assume the addition of coconut oil was simply for a healthy fat? Does it make the smoothie taste a bit like coconut as well? I made a similar smoothie yesterday with almond milk, spinach and vanilla protein powder; but used a pear and a few red grapes to “sweeten” it. I also blended it with ice, which made it pretty thick and satisfying. I assume the chia seeds do a good job of thickening – I’ll be trying them in my next smoothie for sure!

    • Lexi – this is AMAZING! I made it with the mint extract and I think my 3 teenagers might agree that this is better then mint chocolate chip ice cream! I didn’t think that was possible! Love all your recipes – keep it up 😉

    • Is the coconut oil supposed to be warmed up first? I used the one from Trader Joe’s and it is a white color and not liquid as pictured??

    • Just made this (minus the mint). Sooo delish. Perfect afternoon tide me over till supper. Amazing with the small amount of oil there is a slight hint of coconut. I also just used the protein powder I had on hand. Thanks. Will be making again.

      This recipe sounds SO good!! I was wondering if there is a substitute for banana? I am highly allergic (I know, it’s weird and I can’t stand it because I love the flavor!!), but would love to make a shake like this! Thank you 🙂
