Freezer-Friendly French Toast Sticks

Everything is more fun when you’re dipping it into syrup, right?  These French Toast Sticks are such a fun (and easy) breakfast to have on hand year long, but especially with the busy (and strange) school year we have coming up! We give two options for baking or pan-frying, and they freeze really well! So prep ahead and take breakfast off your to-do list with these Homemade French Toast Sticks!

Let’s Talk Bread

As you all know, we are a gluten-free website here at LCK. But if you don’t need to be gluten-free, you can use whatever bread you want! We’ve tested this with both store-bought gluten-free bread, as well as our homemade gluten-free bread recipe (just make sure you bake the triple batch in a loaf pan). We’ve also tested this with store-bought traditional bread. A brioche bread makes for a really nice french toast!

A Note About Soft Bread

If you are using bread for this that is very soft and delicate, like brioche bread or traditional white bread, you might want to toast or let the bread dry out first! If the bread is very soft and stays too long in the egg batter, it can start to break apart.

The bottom line is, use the bread that works best for you! In an ideal world, the bread wouldn’t be pre-sliced, so that you can make the bread sticks a little bit thicker than traditionally sliced bread is, but that is tricky to find with store-bought gluten-free bread.

Baking Vs. Pan-Frying

There are two ways to make these french toast sticks! You can either pan sear them in ghee, or you can bake them all at once for totally hands-off cooking!

To be honest, I much prefer the method of cooking these on the stove top, if I have the time. They yield for a french toast stick that is a bit more custardy in the middle. However, it can be tedious to make them on the stove, as it will take a couple of batches of the french toast.

But the oven baking is really great if you want to do make them all at once, and you don’t want to bother with standing over the stove cooking them. The difference between the two is slight, so choose which works best for you!

How to Freeze French Toast Sticks

What I love most about this recipe, besides the hands-off baking option is that they are freezer-friendly!

Make these now, let them cool to room temperature and then stick in a freezer bag for whenever you or the kids need a quick breakfast!

How to heat: They can be heated up in the toaster until warmed through! Or, you can heat them up in the microwave in short bursts, until warmed through.

Freezer-Friendly French Toast Sticks

Ingredients
  

  • 1 16 ounce loaf of bread, cut into 1″ thick sticks
  • 4 eggs
  • 3/4 cup almond milk or coconut milk or a combination
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch salt
  • Butter / ghee / coconut oil for pan
  • Powdered sugar for serving (optional)
  • Maple Syrup for serving

Instructions

For Stovetop:

  • Cut bread into sticks , set aside.
  • In a shallow bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon and salt.
  • Heat a large non-stick skillet over medium heat. Add 1 tablespoon ghee (or other high-heat cooking oil_ to the pan.
  • Place bread pieces into the egg mixture covering each side of the bread, then into the hot pan. Repeat, placing more bread into the pan, but leaving about 1” in-between pieces. Cook for 2-3 minutes on each side.
  • Remove and repeat the process, adding more ghee to the pan until all of the french toast is cooked.
  • Either serve immediately with powdered sugar and maple syrup, or cool completely and store in the freezer.

For Oven:

  • Preheat oven to 375ºF and liberally grease a large rimmed baking sheet with ghee (about 3 tablespoons).
  • Cut bread into sticks, set aside.
  • In a shallow bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon and salt.
  • Submerge bread pieces into the egg mixture, and then knock off an excess coating. Place the bread onto the sheet pan. Repeat, placing more bread into the pan, but leaving about 1” in-between pieces. 
  • Bake for 8 minutes on the lower rack, then flip the bread and bake for an additional 5 minutes.
  • Either serve immediately with powdered sugar and maple syrup, or cool completely and store in the freezer.

    I made these for Christmas Morning and they are perfect for everyone! I didn’t have to stand and flip the French Toast over a pan on the stove top and because they are sticks everybody (including my littles) got exactly the amount they wanted! We baked our bacon first and these were ready to go into the oven by the time the bacon was done! Will make again! Would recommend! I’m making a second batch to hopefully freeze because between today and yesterday my family ate the entire batch I made Christmas morning! I made mine with Trader Joe’s Gluten Brioche. Look forward to trying with a GF cinnamon raisin bread.

  4. These were such a huge hit with my kids last weekend that they are already asking for more this weekend. I will have the bread cooked in advance this time though. I doubled the bread recipe and cooked in a 9 x 5 pan for 40 minutes. Excellent recipe!
