Vegan Green Goddess Dressing

Green goddess dressing.

Vibrant, bright and so delicious, this Green Goddess dressing works equally as well as a dip or as a dressing for a salad. This version is made vegan and healthy by replacing some of the standard ingredients with heart-healthy avocados.

Ingredients

Scale
  • 1 medium to large ripe avocado
  • ½ cup water, more as needed
  • ¼ cup olive oil
  • 34 tablespoons lemon juice
  • 1 packed cup of picked herbs (see note)
  • 1 teaspoon tarragon
  • 1 garlic clove
  • ½ teaspoon salt, more to taste

Instructions

  1. Add all ingredients to a blender and blend until smooth and creamy. If needed, you can add in a tablespoon of water to aid it in blending together.
  2. Taste and adjust seasoning, adding in more lemon juice or salt and pepper.

Notes

I love how versatile this recipe is in terms of what herbs you add. Adding a mixture of herbs, on top of the added tarragon adds a great flavor. Here are some of our favorite herbs to add to this dressing:

  • cilantro
  • dill
  • parsley
  • basil
  • chives
