Made with just a few simple ingredients, these Healthy Baby Oat Muffins are a perfect first muffin to give to your baby or toddler. They’re made mini, perfect for little hands, and with minimal ingredients.
You can swap the applesauce here for greek yogurt or a baby food puree/pouch. Just be mindful about how the puree tastes since that flavor will likely come through in the final muffin.
Want to make this without the egg? Increase the amount of milk to 1/3 cup, and add in 1 tablespoon of ground flaxseed. Mix together the wet first, and let it sit for 10-15 minutes while the flaxseed hydrates.
Want to make a few different types of muffins at once? Divide the batter and then fold in your optional add-ins, then bake! The total recipe requires about 1/4 cup of add-ins, so if you are dividing the batter up, you’ll need a bit less.
Make sure you are using a mini muffin tin for this recipe and not a full-sized muffin tin.
Want to make this in a blender? Go for it. The recipe works just the same made in a blender as it does whisking it.
If you don’t have oat flour, you can make this recipe by blending up 1/3 cup oats with the wet ingredients in a blender.
