Mint Chip Energy Bites are the perfect on-the-go no bake energy balls snack. They’re easy to make, absolutely delicious, and require absolutely no cooking or baking.

Ingredients

10 medjool dates, pitted
1/2 cup coconut flakes
1/2 cup chopped walnuts
1/4 cup cocoa powder
1/8 teaspoon peppermint extract
Pinch of fine sea salt
2 tablespoons mini chocolate chips
Instructions
Add dates to your food processor and process until broken up into pea-sized bits.
Add in coconut flakes, walnuts, cocoa powder, peppermint extract, and a pinch of salt.
Process until well-combined. Mixture should come together into a large ball. Mix in the chocolate chips.
Roll the mixture into 15 roughly 1-inch balls.
Place in the freezer for 15 minutes before storing in the refrigerator for up to one month.
