      • 2 thin cucumber slices, to use as the bun

      Taco Burger Bites Toppings

      • Homemade guacamole, or use the avocado as the bun!
      • salsa, homemade or store-bought
      • jalapeño, sliced thin
      • sweet potato buns, if not using avocado bun
      • Optional: cheddar cheese
      • Optional: Avocado, sliced in half to make an avocado bun

      Thai Burger Lettuce Wrap Bites

      • 1 lb grass-fed beef
      • 1 teaspoon coconut aminos
      • 1 garlic clove, minced
      • 1/4 teaspoon Sriracha
      • 1 tablespoon scallions, sliced
      • 1/2 onion, caramelized
      • 1/4 eggplant, roasted
      • bib lettuce, used as the bun

      1. Choose the burger bite variations you are interested in making. Assemble the toppings for each one and set aside.
      2. In a medium mixing bowl, combine all basic hamburger ingredients and mix well. If you are making the Thai Burger Bites, add coconut aminos, garlic, Sriracha, and scallions to the burger mixture.
      3. Shape the burger mixture into 10 even-sized patties.
      4. Grill or cook on a greased grill pan for about 5 minutes on each side, or until cooked through to your liking.
      5. Add desired toppings to each burger bite. Use a toothpick to hold the burger together if needed. Serve hot! If topping with cheese, place the cheese on the finished burger and broil on high for 2-3 minutes until cheese is fully melted before adding other toppings.
