Spiced Roasted Cauliflower

Ingredients

  • 1 large cauliflower, cut into florets (roughly 20 ounces or 6 cups cups)
  • 2 tablespoons extra-virgin olive oil
  • 1 14.5-ounce can crushed tomatoes or diced tomatoes
  • 2 garlic cloves, minced
  • 1 onion, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes, optional
  • Fresh parsley leaves, chopped, optional, for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Mix all ingredients in a large bowl and mix until completely coated.
  3. Place cauliflower mixture onto a lined baking sheet and roast for 20 minutes, until fork tender and golden.
  4. Garnish with parsley and serve immediately with your favorite protein.
