Sun-Dried Tomato Chicken Salad

A fresh take on a classic lunch staple: tangy sun-dried tomato and capers with a light mayo based chicken salad!

If it’s not broke, don’t fix it and chicken salad for meal prep is a recipe that sure isn’t broke. We’ve made it a few times here on LCK, but this time we’re making it with an Italian-esque makeover: a mayo based chicken salad with sun-dried tomatoes, capers, parsley and white wine vinegar. It’s salty, tangy and really delicious.

As with all chicken salad, it’s easiest to use either leftover chicken or grab a rotisserie chicken. If doing it this way, this meal prep takes about 5 minutes! If you’re using a rotisserie chicken you can either double up on this recipe since it only calls for 2 cups of chicken, or use the remainder of the chicken for a dish such as Buffalo Chicken Dip, Loaded Paleo Nachos, or Chicken Soup. If you want to make the chicken fresh, you can make shredded chicken in the Instant Pot or slow cooker!

Ingredients for this Sun Dried Tomato Chicken Salad:

  • shredded chicken (make fresh or better yet use leftover or a rotisserie chicken)
  • mayo (we love avocado oil mayo for healthy fats)
  • sun-dried tomatoes packed in oil
  • capers
  • parsley
  • green onion
  • white wine vinegar (or lemon juice)
  • salt and pepper

Ways to Use Chicken Salad:

  • Make it classic with a sandwich! Add baby spinach and avocado if you’re feeling fancy.
  • Wrap it up! There are luckily now a lot of gluten-free wraps, or you could try using a gluten free tortilla, like Siete brands.
  • Serve it over a bed of lettuce. Any lettuce would work here ranging from a classic romaine to a baby kale or spinach.
  • Or wrap it up with lettuce! Check out our post all about making Lettuce Wraps.
  • Put it in an avocado! This flavor combo will be pretty awesome.
  • Serve it with crunchy crackers. There are lots of gluten-free brands, and also some seed based or cheese crackers for low carb.
  • Stuff it in a scooped out cucumber. Scoop the seeds out of the cucumber and stuff in the chicken salad! We’d recommend a traditional cucumber here, which tend to be larger than the European or greenhouse cucumbers.
  • Or just eat it! It’s that good.

Homemade chicken salad stays good for 3 to 5 days in the refrigerator!

Ingredients

  • 2 cups cooked chicken, shredded

Directions

  1. Add all ingredients to a medium bowl. Stir to combine. Taste and adjust seasoning.

Serve this chicken salad over a salad, as lettuce wraps, in tortillas, as sandwiches, and so many other ways! It’s versatile, packed with veggies and protein, and a great lunch to prepare ahead of time!

Taco Chicken Salad

Prep Time 10 minutes Total Time 10 Yields 6

Ingredients

  • 2 cups shredded chicken (see notes)
  • 1-15 oz can black beans, rinsed and drained
  • 1/2  red onion, finely diced
  • 1 cup roasted red peppers, finely diced
  • 1/2 cup pickled jalepeño, finely diced
  • 1 cup romaine lettuce, finely sliced
  • Optional: Shredded cheddar cheese
  • Optional: 1/3 cup corn kernels 
  • 1/3 cup good quality mayonnaise
  • 1 tablespoon taco seasoning

Taco Seasoning

Directions

  1. In a large bowl add all ingredients except mayo and taco seasoning and combine.
  2. In a small bowl mix together mayo and 1 tablespoon taco seasoning and add to chicken mixture.
  3. Serve immediately or place in containers in refrigerator  for later.

Recipe Notes

  • For even more convenience, use a store-bought rotisserie chicken.

Ingredients

  • 2 tablespoons mayonnaise, store-bought or homemade (page 246)
  • 1/2 teaspoon Smoky Spice Blend (this makes a lot, so adjust accordingly)
    • 2 tablespoons smoked paprika
    • 2 tablespoons granulated onion
    • 1 tablespoon chipotle powder
    • 1 tablespoon sea salt
    • 1 tablespoon sweet paprika
    • 1 1/2 teaspoons ground cinnamon
    • 1 1/2 teaspoons black pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 8 ounces chicken breast, cooked and shredded or finely chopped
  • Sea salt and ground black pepper
  • 4 leaves romaine lettuce
  • Sliced tomato, for serving

Directions

  1. In a medium mixing bowl, combine the mayonnaise, spice blend, celery, and red onions.
  2. Add the shredded chicken and mix to combine. Taste to check the seasoning and add salt and pepper if needed.
  3. Serve in romaine lettuce leaves and garnish with tomato slices and an extra sprinkling of the spice blend and black pepper.

I am so excited to partner with my friends at the American Pecan Council to bring you today’s delicious salad. I am seriously obsessed with this one!

Pecans are one of my all-time favorite nuts. Their crisp and buttery texture and naturally sweet taste makes them my go-to for salads and other savory dishes.

They are low in carbs, high in fiber, and they contain the same heart-healthy unsaturated fats that are found in other nuts, but they’re among the highest in monounsaturated fats, including the beneficial oleic acid that’s found in olive oil!

Another fun fact? Pecans have 3 grams of protein per ounce and 11% daily value of fiber per ounce! A heart healthy, nutritious snack that is so delicious! 

These candied pecans are next level amazing. You may remember my gift giving series this December. I packaged similar candied pecans as little gifts and they were an absolute hit. They’re even better in a salad!

Candied Pecan and Herb Chicken Salad

Prep Time 15 minutes Cook Time 30 minutes Total Time 0:45 Serves 4

Ingredients

    Candied Pecans

    Grilled Herbed Chicken

    Shallot Vinaigrette: (makes 1/2 cup)

    Other Salad Ingredients

    • Fresh apples, peaches, or apricots, sliced thin
    • 2-4 cups mesclun greens or mixed greens
    • 1/4 cup fresh mozzarella, diced or brie cheese
    • 1 red onion, sliced thin
    • 3 fresh figs, sliced in half

    Directions

    1. Preheat oven to 250°F and line a half-sheet tray with parchment paper.
    2. In a small mixing bowl, beat egg white and water together until frothy.
    3. In a separate bowl mix together maple sugar and sea salt and set aside.
    4. Toss pecans in the frothed egg white mixture first and then place in spice mixture until evenly coated. Place on sheet tray and bake for 30 minutes. The pecans should be well coated in the maple sugar.
    5. Pat chicken dry and season with salt and pepper.
    6. In a small mixing bowl, mix together garlic powder, 1 tablespoon extra-virgin olive oil, and fresh herbs.
    7. Coat chicken well in herb mixture.
    8. Place chicken on a greased grill or grill pan for about 3-4 minutes on each side, or until fully cooked through. If using a grill pan, make sure to cover the chicken to ensure even cooking. Take chicken off heat, slice, and set aside until ready to eat.
    9. While chicken cooks, whisk salad dressing ingredients together in a small mixing bowl.
    10. Assemble all salad ingredients on a serving platter of choice. Save half of the candied pecans for snacking!  Drizzle with shallot vinaigrette (1/4 cup or more, as desired) and devour!

    Honey Mustard Chicken Salad

    I am super into chicken salad as of late. Cranberry Walnut, Pesto, Apple Dill… you name it. Now that I make my own mayo it’s great. I don’t need to worry about using ingredients I’m not thrilled about, and can get pretty creative! But, I don’t always have the mayo on hand and for those moments I go honey mustard. It is so good. I love the addition of roasted red peppers and cilantro in it, like really really love those flavors together.

    • 1 lb. organic chicken
    • 1/4 cup mustard (I often use 2 tbsp dijon, 2 tbsp spicy brown)
    • 2 tbsp raw honey
    • 1/3 cup fresh cilantro, chopped
    • 1/2 cup roasted red peppers, chopped

    Directions

  • 1. Prepare chicken as desired: poach it or make some crock-pot shredded chicken
  • 2. In a bowl whisk together mustard and honey, set aside
  • 3. When chicken is done and ready to assemble chop cilantro and red peppers
  • 4. Combine chicken, honey mustard, cilantro, and red pepper; mix well
  • 5. Store in refrigerator!

    Now that we are home and are getting settled for the work week, I wanted a lunch that was quick, easy, and light (since our weekend was anything but) and this was just what I needed.

    10 minutes to toss together, one-bowl for minimal cleanup, and loaded with delicious Fall flavors = the perfect lunch for busy work weeks!

    Apple Dill Chicken Salad [low-carb, dairy-free, paleo-friendly]| Lexi's Clean Kitchen

    Apple Dill Chicken Salad

    Prep Time 00:10 Cook Time 00:00 Total Time 0:10 Serves 2

    Ingredients

    • 2 cups cooked chicken, shredded
    • 1/3 cup organic mayonnaise (homemade or store-bought), add more as needed
    • 2 organic apples, finely diced
    • 1 1/2 teaspoon dried dill, more to taste
    • 1/2 red onion, finely diced
    • 2 teaspoon coconut sugar

    Directions

    1. Cook Chicken: How To: All-Purpose Shredded Crock Pot Chicken
    2. Allow chicken to cool and transfer 2 cups to a large mixing bowl.
    3. Add mayonnaise, apples, dill, and red onion to the large mixing bowl.
    4. Mix well to combine. Taste and adjust ingredients as needed.
    5. Store in an airtight container in the fridge for up to one week.

    • I start with a tablespoon of mayonnaise and add until I reach my desired amount
