Looks like summer is here and I am certainly ready! I started off my day with a refreshing shake that contains my morning coffee, protein, and healthy fats (don’t be afraid of fats, you guys!). Oh, and it was DELICIOUS.

Vanilla Coffee Protein Shake

Prep Time 00:10 minutes Cook Time 00:00 Total Time 0:00 Yields 2

Ingredients

  • 1/2 cup unsweetened almond milk
  • 1/2 cup freshly brewed organic coffee, place in fridge for 10 minutes
  • 1 frozen banana

  • 1/2 tablespoon chia seeds
  • Optional: 1 teaspoon raw honey or sweetener of choice
  • Optional: Handful of ice cubes

Directions

  1. Combine all ingredients in a high speed blender.
  2. Blend until creamy.
  3. Taste and add additional sweetener if needed.

How To Make Cold Brew Coffee

WELL! It officially really feels like Summer. 90 degrees all last week and I’m seriously at the point of retiring my morning hot coffee for ALL iced coffee. It’s August and it was bound to happen already. BUT, don’t give me hot coffee watered down with ice. I want some good, strong cold brew; and it’s EASY to make!

Why cold brew over regular iced coffee

The difference between iced coffee and cold brew is the brewing process. Cold brew is brewed without any heat. Ground coffee beans are steeped in cold or room-temperature water for between 12 and 24 hours. This process creates a flavor with less bitterness than your typical iced coffee, since it oxidizes over a longer period of time than hot-brewed coffee! Also, the acids and oils released when making hot coffee remain in the bean, making for a smoother taste!

Let’s break this down into five easy steps!

Step 1: Pour 1 3/4 cup ground coffee into a pitcher.

Step 2: Pour 4 cups of water into the pitcher.

Step 3: STIR.

Step 4: Cover with plastic wrap and let steep for 12 hours.

Step 5: Remove plastic and place a cheese cloth over a beverage dispenser or an additional pitcher. We recommend making a dip in the cheese cloth and not pulling it so tight, so the coffee can sit in it well. Pour coffee over the cloth. 

Store in the refrigerator in mason jars. Now simply add ice and serve as desired!

How long should you let cold brew coffee steep?

Good question! I like to leave mine overnight, or roughly 12 hours!

Cold Brew Coffee

Prep Time 00:05 Inactive Time 12:00 Total Time 12:05 Serves 4

Ingredients

  • 1 3/4 cups ground coffee
  • 4 cups filtered water

Directions

  1. Step 1: Pour 1 3/4 cup ground coffee into a pitcher.
  2. Step 2: Pour 4 cups of water into the pitcher.
  3. Step 3: STIR.
  4. Step 4: Cover with plastic wrap and let steep for 12 hours.
  5. Step 5: Remove plastic and place a cheese cloth (I use a few layers, if you use to many, your cold brew won't go through) over a jar, beverage dispenser, or an additional pitcher. You may want to tie it down with a rubberband. Pour coffee over the cloth. 
  6. Store in the refrigerator in mason jars. Now simply add ice and serve as desired!

You will need:

Cleaning your cheese cloth:

  • Immediately rinse your cheesecloth in hot water or place it in hot water to soak until you have a chance to wash it. After soaking, rinse again. Try to remove as many bits of food as possible before you start to wash it.
  • Use only food safe soaps since regular household soaps contain toxic chemicals that may soak into the cotton fibers and later come into contact with your food.
  • Lemon juice, white vinegar and baking soda can also be useful for loosening up crusty bits and removing stains. You can add any one of these ingredients to soaking water. Use 1/2 cup to 1 cup per gallon of water, depending on how grimy the cheesecloth is. You can make a baking soda paste to scrub out stubborn stains. Be sure to rinse the cheesecloth thoroughly, because even lemon juice and vinegar may attract pathogens or fruit flies.
  • Dry the cheesecloth in a hot dryer, or hang it outside to dry in the sun if you have adequately hot temperatures to dry it quickly.

Dairy-Free Golden Turmeric Latte with Espresso

Prep Time 5 minutes Cook Time 5 minutes Total Time 0:10 Serves 2

Ingredients

  • 2 1/2 cups almond milk, additional milk for frothing
  • 2 teaspoons honey, more to taste based on your desired sweetness
  • 1 teaspoon turmeric, more for topping
  • 1/2 teaspoon cinnamon, more for topping
  • Pinch of black pepper
  • Optional: 1/2 teaspoon ground ginger or fresh ginger
  • 1 shot of espresso

Directions

  1. Heat two cups of almond milk in a small saucepan over low heat.
  2. Stir in turmeric, honey, cinnamon, black pepper, and ginger if adding. Heat for about 3 minutes until warm.
  3. Remove from heat and pour into mugs of choice.
  4. Add a shot of espresso. Taste and adjust sweetener as needed!
  5. Top with frothed milk, sprinkle additional cinnamon and turmeric on top and enjoy!

Coffee Fudge Chunk Ice Cream

Happy Monday, my friends! This weekend was nice and relaxing, with some fun LCK events added to the mix. On Friday, the two winners from my Chestnut Hill Square giveaway (Ali and Dana) and I took a spin class at SoulCycle, had lunch at SweetGreen, picked out earrings at Francesca’s, got a gluten-free cupcake from Sweet, and for out last stop, went over to Athleta where we got some brand new yoga mats! What an awesome day with two awesome local Boston ladies!

THEN, on Saturday I took a fitness class at The Street in Chestnut Hill followed by me serving up some goodies at Lululemon! I brought with me my Watermelon Basil Salad, Cookie Bars, and Sea Salt Almond Butter Cups and hung out in the store meeting awesome readers and local shoppers! It was a great day. Mike and I went out to dinner at our local favorite spot, Tempo later that night, and then had a productive rainy Sunday (and Jax had a little puppy play date)!

Ingredients
  1. 1 can full-fat coconut milk
  2. 1 cup almond, cashew, or nut milk of choice
  3. 1/4 cup cold coffee
  4. 1/2 cup raw honey
  5. 2 tbsp instant espresso
Fudge chunk
  1. 2 cups Enjoy Life Dark Chocolate Chips
  2. 1 tbsp almond milk (or nut milk of choice)
Instructions
  1. Place ice cream ingredients into your high-speed blender and blend until smooth
  2. Pour ice cream mixture into a tupperware and freeze for an hour or so, until cold
  3. Pour mixture into your ice cream machine, and proceed following the manufacturer’s instructions
  4. Once done, pour ice cream into your tupperware (I use a bread pan)
  5. Heat chocolate until melted and pour in almond milk- mix to combine*
  6. Drop spoonfuls of the fudge into the tupperware and swirl around with a fork or a toothpick
  7. Freeze for an hour until it hardens enough to create scoops!
  8. If completely frozen, thaw for 15 minutes minutes before scooping

  2. 2-3 cups unsweetened vanilla almond milk, depending on how chocolatey you want it!
  3. 1 cup freshly brewed coffee
  4. 1 tbsp raw honey
Dairy-Free Whipped Cream
  1. 1 can coconut milk, refrigerated at least overnight
  2. 1/2 tsp vanilla extract
Instructions
  1. In a saucepan heat chocolate and almond milk and stir well until combined
  2. Add coffee and raw honey and stir well
  3. Pour into your mug and top with dairy-free whipped cream for an extra treat
  4. Dairy-Free Whipped Cream
  5. Remove can from fridge and turn upside down
  6. Use a can opener to open and scoop out the thick into a bowl
  7. Add vanilla extract and whip using a hand blender
  8. Taste and add more vanilla/sweetener as desired
