But trust us, adding in a few simple ingredients really highlights the fruit and takes this crowd-pleasing fruit salad from just ok to SO DELICIOUS! What’s even more perfect is that you can switch up the fruit based on the season and serve this all-year-round.

How to Make Honey Lime Salad Dressing

The name of the game for this dressing is EASY! Just mix up all of the ingredients in a bowl and add to your cut up fruit.

Here are the ingredients:

  • Honey
  • Lime 
  • Chia seeds

What other fruit can be added?

Most fruit would work well in this salad! You can change it out for whatever is in season or what is available for you. However, leave out banana as it gets brown very quickly and can turn mushy.

Honey Lime Fruit Salad with Paleo Cinnamon Sugar Chips

Ingredients

    Fruit Salad

    • 1 pint organic strawberries, finely chopped
    • 4 kiwis, finely chopped
    • 3 pineapple spears, finely chopped
    • 1/2 pint organic blueberries
    • *Any other fruit you'd like to add!

    Honey Lime Dressing

    • 1 whole lime, juiced
    • 3 tbsp raw honey

    Cinnamon Sugar Chips

    Directions

    1. 1. Preheat oven to 300
    2. 2. In a mixing bowl combine all ingredients and mix well
    3. 3. Line a baking sheet with parchment paper or your slipmat
    4. 4. Place ball of dough in the center and cover with another piece of parchment paper
    5. 5. Roll out with rolling pin until very thin (1/8 in.)
    6. 6. Using a pizza cutter, cut squares of desired size
    7. 7. Sprinkle with additional cinnamon and coconut sugar and bake for 15-20 minutes until crispy
    8. 1. Chop all fruit and place in bowl
    9. 2. In a bowl, mix honey and lime juice
    10. 3. Transfer fruit bowl and honey lime dressing bowl (separately) into refrigerator until ready to use
    11. 4. When ready to serve, pour dressing on fruit and mix well
    12. 5. Serve with homemade crackers!

  • Serving size depends on the setting, in my opinion. This serving is perfect for a dinner party of 2-4 people. For a small gathering/party, I will double or even triple this recipe.

    Vanilla Honey Fruit Salad & Brownie Bark Chips

    Happy 4th of July!!!! I hope you are enjoying a nice day off, relaxing, and spending time with family and friends (and of course, cooking up a storm)!

    This month for Healthy Food Friday with American Express we are thinking about vacations and the powers of them. Generally when I think of vacation I think of some place exotic with unique foods and experiences. We’ll get there this month, I promise! But, today, seeing as it’s the 4th and we are celebrating America, I am not thinking about an exotic vacation, but my most recent vacation to Florida to celebrate my nanny’s (grandma) 91st birthday. We had the best time, from great meals out and relaxation, to just quality family time with the heart of my family; a perfect week. 

    A staple in my baking and in my pantry is raw local honey. It is loaded with nutrients! Unlike store bought honey, raw honey is not processed or heated therefore keeps all of it’s nutrients while being delicious. WIN-WIN!

    And of course, I can’t help but continue to dream of that heavenly Brownie Brittle that nanny has stocked in her pantry. I thought… brownies as chips? Perfect for a fruit salad. Actually, more than perfect; hands-down nothing better!

    Vanilla Honey Fruit Salad with Paleo Brownie Bark Chips

    Ingredients

      Brownie Bark

      Fruit Salad

      • 1-2 cups organic strawberries
      • 1-2 cups organic blueberries
      • 1 large banana
      • 1-2 tbsp raw honey
      • 1 vanilla bean, scraped

      Directions

    • 1. Preheat oven to 325
    • 2. In one bowl combine almond flour, cocoa powder, and salt
    • 3. In a separate bowl combine egg, almond butter, honey, almond milk, and vanilla extract- whisk together well
    • 4. Combine both bowls and mix well; fold in chocolate chips and mix
    • 5. Spread thin onto a greased baking sheet (the thinner the batter, the crispier the chips)
    • 6. Bake for 25 minutes, remove and use a pizza cutter to cut into bark pieces
    • 7. Return to oven and let cook for an additional 10 minutes
    • 8. Let cool COMPLETELY before serving
    • 9. In a bowl combine chopped fruit with vanilla bean and raw honey; mix to combine
