Sometimes you just really want a muffin, and coffee crumb cake muffins are just so good…  every single time. Cake on the bottom and a loaded crumbly sweet cinnamon topping on top.  How can you go wrong? That’s a trick question. You seriously can’t go wrong. These were eaten in record time and more were requested.

Ingredients
  1. 1 cup blanched almond flour
  2. 1 1/2 tsp coconut flour
  3. 1/8 tsp salt
  4. 1/4 tsp baking soda
  5. 1/2 tsp cinnamon
  6. 2 eggs
  7. 2 tbsp pure maple syrup
  8. 1 tsp organic vanilla extract
  9. 1/3 cup unsweetened apple sauce
Crumb Topping
  1. 1/4 cup coconut sugar
  2. 1/4 cup softened grass-fed butter (or sub oil)
  3. 1/4 cup blanched almond flour
  4. 1 1/2 tsp cinnamon
  5. Dash Himalayan sea salt
Instructions
  1. Preheat oven to 350
  2. In a bowl combine dry ingredients
  3. Add in wet ingredients and pour into greased muffin tins or silicone muffin liners
  4. In a separate bowl, mix together topping ingredients until in chunks
  5. Generously top your muffins with the topping (remember: coffee cake is all about the topping)
  6. Bake for 15-20 minutes until a toothpick comes out clean

    Good morning, all! If you’ve tried my Cinnamon Bun Banana Muffins or my Paleo Peach Cobbler Muffins, you know I am a big fan of a light breakfast muffin that won’t ruin my day. Describing these muffins is simple: They are light, moist, flavorful, and filled with a variety of good-for-you ingredients! They make for the perfect start to your day.

    Ingredients
    1. 1 cup almond flour
    2. 1 1/2 tsp coconut flour
    3. 1/8 tsp salt
    4. 1/4 tsp baking soda
    5. 1/2 tsp cinnamon
    6. 1 tbsp coconut oil
    7. 2 eggs
    8. 2 tbsp raw honey (add an additional 1/2 tbsp if you like things a bit sweeter)
    9. 1 tsp organic vanilla extract
    10. 1/3 cup unsweetened apple sauce
    11. 1/4 cup shredded coconut
    12. 1/4 cup raisins
    13. 1/3 cup shredded apple
    14. 1/4 cup grated organic carrots
    15. 1/3 cup walnuts, chopped
    16. Optional: 1/3 cup Enjoy Life's mini chocolate chips
    Instructions
    1. 1. Preheat oven to 350
    2. 2. In a mixing bowl combine first five ingredients
    3. 3. In a separate bowl whisk coconut oil, eggs, vanilla, raw honey, and unsweetened apple sauce
    4. 4. Combine wet and dry ingredients
    5. 5. Mix in raisins, coconut, apple, carrots, and walnuts (and optional chocolate chips if adding)
    6. 6. Pour into muffin tins or muffin liners
    7. 7. Bake for 15 minutes or until a toothpick comes out clean
    8. 8. Let cool on cooling rack and serve!
    9. 9. Store in tupperware for best results, keep in the refrigerator

      • Preheat oven to 350°F and line muffin tin with muffin liners.
      • In bowl combine almond flour, coconut flour, baking soda, and salt.
      • In a separate bowl combine egg, melted coconut oil or grass-fed butter, honey, and mashed banana and mix well.
      • Combine wet and dry ingredients.
      • Fill muffin tins 3/4 of the way. Top each muffin with 1 teaspoon of the cinnamon swirl mixture and mix with a toothpick.
      • Bake for about 20-25 minutes or until a toothpick comes out clean.
