Crock Pot Cranberry Sauce

This Crock Pot Cranberry Sauce is an easy update on the classic Thanksgiving staple! It is such a great combination with tart cranberries, along with sweet apples and just the right amount of citrus. It’s made right in the slow cooker which means hands-off cooking so you can focus on other aspects of your holiday meal! It contains no refined sugars and is bound to be a new family favorite!

Crock Pot Cranberry Sauce

Forget the over sweetened canned cranberry sauce this year because it is SO EASY to make this Crock Pot Cranberry Sauce! You essentially throw all the ingredients in your slow cooker and walk away! It also is  refined sugar free relying on coconut sugar, honey and sweet apples to balance the tart cranberries and citrus.

This sauce is of course well known as a Thanksgiving staple, but I also love to put a spoonful right on top of of latkes or as a versatile spread for breakfast or leftovers!

How do you sweeten homemade cranberry sauce?

We used a combination of naturally sweet apples, orange juice, honey and coconut sugar!

How long does homemade cranberry sauce last?

Homemade cranberry sauce will last quite a while, so this makes it a great make-ahead part of your holiday feast! We’d recommend using it within 7-10 days after making for optimal freshness, but it could very well last longer. For Thanksgiving it might make sense to make the cranberry sauce a few days ahead of time! You can serve it cold or you can re-heat gently in a pot over low heat.

Directions

  • 1. Place all ingredients in slow cooker
  • 2. Cook on high for 4 hours
  • 3. At 3 hours, use a potato masher and mash mixture (leave some chunks)
  • 4. Cook for the remaining hour with lid ajar

This easy Italian meat sauce recipe is my probably my all-time favorite pasta sauce recipe! It’s an easy homemade meat sauce recipe that is hearty and flavorful, and perfect for a weeknight meal. Make this healthy meat sauce with ground turkey or ground beef, and let it cook nice and slow! It’s gluten-free, paleo-friendly, whole30 compliant, and so yummy! Serve it over zucchini noodles or spaghetti squash for low carb, or gluten-free pasta!

I LOVE Italian dishes. Especially a quick and delicious meat sauce! I often make my favorite Italian dishes into healthy versions that I love to dig into, weekly. This spaghetti meat sauce is delicious, always a hit and so versatile! Serve it over zucchini noodles, spaghetti squash, the options are endless! I often make a big batch to have for the week, and I never get sick of it!

How Do You Make Meat Sauce

Lexi's Meat Sauce

Prep Time 00:05 Cook Time 00:15 Serves 6

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 3 large organic carrot stalks, chopped
  • 1 lb. organic grass-fed beef (or ground turkey)
  • 1 15 oz. can organic diced tomatoes
  • 1 15 oz. can organic tomato sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes, more to taste
  • 1 teaspoon sea salt, more to taste
  • 1 teaspoon freshly ground pepper, more to taste
  • 1 tablespoon fresh basil, more for garnish
  • Optional: Serve with fresh parmesan
  • Optional: Garnish with fresh Basil

Directions

  1. In a medium sized saucepan, heat 1 tablespoon extra virgin olive oil over medium-high heat. Add garlic and sauté for 1-2 minutes.
  2. Add onion, carrots, and peppers to saucepan. Let cook, stirring occasionally, for 5 minutes until onions are translucent and the carrots begin to soften.
  3. Add meat to saucepan and let cook until brown and no pink remains.
  4. Add tomato sauce, diced tomatoes, spices, and 1 tablespoon fresh basil to the pan and mix well.
  5. Bring to a boil over high heat. Reduce heat to low and let simmer for 15 minutes. Taste and remove from heat.
  6. In a large skillet, heat remaining tablespoon of extra virgin olive oil over medium-high heat. Add in zucchini noodles and red pepper flakes and let cook for 2-3 minutes.
  7. Serve over zucchini noodles or spaghetti squash.

Pumpkin BBQ Sauce

Over the summer I brought you guys a Sweet and Smoky BBQ Sauce. That recipe is seriously one of my favorites. BBQ Shredded Chicken Lettuce Cups, grilled chicken, and so on. It’s easy, and the perfect condiment to spice up your lunches- without an of the junk.

BUT, since Fall is in full swing, I wanted a BBQ sauce with a little more Fall flavor going on. Pumpkin + BBQ Sauce = perfection! Less smoky than my other, and more Fall flavors… WIN!

  • Place all ingredients into a large pot (it will splatter slightly, so avoid using a small pot), and mix well to combine
  • Bring to a boil then reduce heat and let simmer for 10 minutes
  • Transfer to blender and blend until smooth

    Sweet & Smoky BBQ Sauce

    We love BBQ sauce around here! Every time we travel somewhere interesting, I always like to try something new and buy a unique hot sauce or BBQ sauce. Because it’s all about food and condiments, right?

    When you look at the ingredients (you always should), you’ll find words you can’t pronounce, and often that what you are buying contains less than desirable ingredients (soy, sugars, wheat), etc., hence… Homemade BBQ sauce!

    Homemade BBQ Sauce is surprisingly easy to make once you have the right formula! I’ve had some pretty trusty taste-testers for this one, and think you’ll be a fan, too!

    I am experimenting and working on perfecting a paleo (and nut-free) pizza crust, and made BBQ chicken to go with it. I can’t even tell you what a hit it was with this BBQ sauce. Pizza crust round three… today! I won’t quit until it’s perfect!

    Grilled Peach, Avocado, and Crab Salad with Avocado & Peach Dressing

    Ingredients

      Salad Ingredients

      • 1 cup organic arugula (or more depending on how many you are serving)
      • 1 Hass avocado, diced
      • 1 red onion, thinly sliced
      • 2 peaches, pit removed, quartered, and grilled
      • 6 oz. lump crab meat

      Peach Dressing

      Directions

      Grease a grill or grill pan and grill for 3-5 minutes on each side, until well caramelized.

      In a high speed blender, peach ingredients and blend until smooth. Taste and adjust seasoning as desired.

      Place arugula, grilled peaches, and avocado on serving platter of choice. Top with crab meat and a drizzle of peach dressing! Serve with more dressing on the side.

      Recipe Notes

      • *Store leftover dressing in an air-tight container for up to one week.
      • **If using a high-speed blender, you do not need to peel the peaches for the dressing!
      • *** Substitute crab meat for grilled shrimp or protein of choice, if desired!

      Zucchini Linguine Fra Diavolo

      This low carb Zucchini Linguine Fra Diavolo is my healthy Italian take on this spicy dish; and man is it good! Since I love Italian food, I love even more making heavy Italian dishes into light healthy hits.

      Zucchini Linguine Fra Diavolo

      Prep Time  5 min Cook Time 25 min Yields 4

      Ingredients

      Directions

      1. Heat oil in a large skillet. Cook garlic and onion until translucent. About 2-3 minutes.

      2. Add the diced tomatoes, organic tomato sauce, and dry white wine.

      3. Add in spices and let simmer until all of the wine cooks out. About 10-15 minutes.

      4. Add shrimp to pan and let simmer all together until shrimp is opaque and fully cooked through. Taste, and add salt and pepper if needed.

      5. In a small skillet, heat a tablespoon of extra virgin olive oil.

      6. Add spiralized noodles to pan with a pinch of salt and pepper. Cook until soft, about 2-3 minutes.

      7. Place the cooked spiralized noodles on desired serving dish and top with sauce. Serve warm.
