I used to really be into smoothies, and then I hit a wall and decided they weren’t as exciting to me as a breakfast option like eggs or a hearty meal. Lately, especially after a long weekend away, I am back on my smoothie game and this Superfood Summer Smoothie hits the spot! It is creamy, fruity, and packed with nutrients to fuel your body for success!

Super Food Summer Smoothie

Ingredients

  • 1/2 frozen banana
  • 1 Kiwi, skin peeled
  • 1/4 cup frozen pineapple 
  • 1/2 cup frozen strawberry
  • 1/4 cup frozen Peaches
  • 1/2 cup frozen Raspberry
  • 1 teaspoons grated ginger, more to taste
  • 1 teaspoon chia seeds
  • 2 cups cashew milk, or nut-milk of choice, add more based on desired consistency
  • 1/4 teaspoon cinnamon, more for garnish
  • Optional: 1/4 cup cauliflower, frozen
  • Optional: 1 teaspoon bee pollen, either blended in or used as a garnish
  • Optional: 1 teaspoon ground flaxseeds
  • Optional: 1 scoop protein powder of choice

Directions

  1. Place all ingredients in a high-speed blender. Blend until smooth. If too thick, add more liquid and blend longer. Serve right away!

Recipe Notes

If you want to add more veggies into your diet the cauliflower is a great way to do so! It will also help make this smoothie extra creamy.

My day generally goes as follows (in terms of beverages) water with lemon, coffee, water all throughout the day and evening (an occasional martini or glass of wine), and possibly a second cup of coffee.  See, I generally don’t opt for a lemonade, a juice, and definitely no sodas around here. Usually it’s just water. Every so often during a hot summer day I crave a refreshing drink that has a little something sweet.

Making time to relax, read, and focus on my mind and body is something I am focusing on this Summer. Relaxation, sleep, and removing stress is just as big of a part of a healthy lifestyle as is eating clean and working out. So, whip up a batch of this refreshing Strawberry Lemonade with Mint and make some time for YOU today.

Ingredients
  1. 1 cup fresh organic strawberries
  2. 2 tbsp raw honey, more as desired
  3. 4 cups water
  4. 3-4 large lemons, juiced
  5. 1/3 cup fresh mint leaves
  6. Ice
Instructions
  1. 1. In a high-speed blender, blend strawberries and raw honey until smooth
  2. 2. In a pitcher combine water, lemon, and ice
  3. 3. Pour in blended strawberries, add in mint; muddle/mix until combined
  4. 4. Taste and adjust flavoring as needed (i.e. add additional lemon, mint, or honey)
Notes
  1. A little vodka would be a great addition to this! My favorite gluten-free vodkas are Tito's and Ciroq.

    June is here and in a few short weeks it will officially be SUMMER. This month for Healthy Food Friday with American Express we are focusing on all things summer. I thought the best way to start this month of fun would be with one of my favorite go-to fruits, strawberries. They are packed with nutritional benefits and can be the perfect addition to your morning smoothiedessertsalad, even made into some healthy JAM, and now, ice cream!

    • a good source of fiber
    • contains anti-aging property
    • Promotes eye health and bone health
    • Good source of manganese, potassium, vitamin c and folate
    • Packed with antioxidants

    And who doesn’t love ice cream? More so, this combination of chocolate and fresh strawberries turned into ice cream. Who’s with me?

    Here are the ingredients:

    • Coconut milk
    • Vanilla Almond Milk
    • Vanilla extract
    • Honey
    • Fresh strawberries
    • Chocolate chunks

    Do you need an ice cream churner to make this?

    Yes this ice cream needs be churned! It helps lighten the texture of it!

    Chocolate Chunk Strawberry Ice Cream

    Ingredients
    1. 1 can full-fat coconut milk
    2. 1 cup unsweetened vanilla almond milk
    3. Optional: 1 tsp arrowroot
    4. 1 teaspoon vanilla extract
    5. Dash Himalayan sea salt
    6. 3 tablespoons raw honey
    7. 2 cups fresh strawberries, chopped (each cup separate)
    8. 1 cup chocolate chunks, chopped (70% dark or higher, or Enjoy Life's chocolate chips)
    Instructions
    1. 1. In your blender combine coconut milk, almond milk, vanilla, sea salt, arrowroot, honey, and 1 cup fresh strawberries
    2. 2. Blend until smooth and set in fridge to chill for 15-30 minutes
    3. 3. Remove ice cream maker from the freezer
    4. 4. Pour blended mixture into ice cream maker and churn as directed on your ice cream maker (I do mine for 30-45 minutes!)
    5. 5. Fold in chopped chocolate chunks and chopped strawberries
    6. 6.Serve right away or store in freezer until hardens enough to scoop

    1. If fully frozen, let thaw for at least 20 minutes before scooping and serving

    Are Chia Seeds Paleo?

    Yes! Chia seeds are a Paleo-friendly and nutrient-dense. They’re easy to digest and can even aid in digestion by helping this move along! They are also contain omega-3’s which means they’re not only good for your body but also good for your brain!

    Can you make jam without pectin?

    Absolutely! The chia seeds thicken this jam wonderfully by absorbing a lot of the liquid of the strawberries without having to cook the mixture for hours. As the directions state, we recommend cooking it a bit to get the correct desired consistency, and then after cooking the chia seeds will continue to absorb liquid to thicken up the jam.

    Store in a mason jar for up to 10 days in the refrigerator!

    Strawberry Chia Jam

    Prep Time 00:05 Cook Time 00:20 Total Time 00:25 Yields 2 cups

    Ingredients

    • 5 cups organic strawberries, rinsed, hulled, and cut
    • 1/4 cup honey or maple syrup
    • 1 tablespoon lemon juice
    • 2 tablespoons chia seeds

      Directions

      1. In a pot add strawberries, sweetener and lemon juice. Let sit for a 5 minutes to macerate.
      2. Turn on heat to medium and let the mixture come to a simmer, gently mash down the berries. Let cook on a simmer for about 5 minutes.
      3. Add chia seeds, stir and continue to simmer for 10-15 minutes, stirring often to avoid sticking.
      4. Once thick, remove from heat, let cool and store in air-tight containers for up to one week.

      Homemade Strawberry Vinaigrette

      This Homemade Strawberry Vinaigrette adds such delicious flavor to any salad. The combination of fresh, local, sweet strawberries with tangy balsamic vinaigrette is salad dressing perfection. This vegan salad dressing is also Paleo friendly and will be loved by all!

      This vinaigrette screams summertime! Made with fresh strawberries, tart balsamic vinegar and salt and fresh ground black pepper to round it all out it will be perfect for a spring or summer salad! I also like to use it as a marinade for chicken of for a tart and sweet dip for fruits or veggies. 

      It’s a great way to use up all those fresh, ripe strawberries! They can be slightly overripe, just be sure to test a strawberry from your batch to make sure it tastes good on it’s own.
