These Crispy Baked Buffalo Wings are the perfect appetizer recipe for football Sunday or Super Bowl! They are crispy with frying, and are a great lightened up version of your classic fried buffalo chicken wings!

You can’t have a Superbowl party without wings (in my opinion)! You can though, have them crispy and flavorful without being fried. I visited friends at the University of Buffalo years back. We, of course, got the famous Buffalo wings and as you can imagine they were fabulous.

In college I was a big fan of Wings over Amherst (these are not healthy). I definitely still think about those fried boneless wings (and the cajun cheese fries). Many of my friends ordered honey mustard, BBQ, garlic parmesan… me? Give me Buffalo any day of the week.

Can you bake chicken wings?

The tip I found years back that I love (and successfully tried with my Sweet Potato Chili Fries), is placing a wire rack on the baking sheet. Gets everything nice and crisp!

Can you use chicken legs or chicken thighs?

Yes! Just adjust cooking time and sauce amount as needed.

Crispy Baked Buffalo Wings

Ingredients

Directions

  1. Preheat oven to 400ºF and line a baking sheet with slipat or parchment paper and place a wire rack on top.
  2. Pat chicken wings dry with a paper towel, and then coat the chicken wings in oil, salt, and garlic powder.
  3. Bake for 40-45 minutes, flip wings after 30 minutes, and cook for a remaining 10-15 minutes.
  4. In a saucepan, bring hot sauce and butter to a boil then remove from heat and stir.
  5. Remove wings from oven and toss them in the sauce.
  6. Once coated, place back on the rack and bake for an additional 5 minutes (save extra sauce).
  7. Remove wings from oven, coat with extra sauce.
  8. Serve hot with dippings of choice, like carrots, celery, and the ranch dressing in my cookbook.

Recipe Notes

  • For fully dairy-free sub butter for your favorite vegan butter or oil of choice.
  • Have time to a marinate? Though not needed for this recipe? Marinate overnight in the sauce, and make additional sauce for tossing!

  1. 3 chicken breasts
  2. 1 red bell pepper, diced
  3. 1 onion, diced
  4. 2 garlic cloves, minced
  5. 1 jalapeno, diced (if you like it less spicy, remove seeds)
  6. 1 can Old El Paso Crushed Green Chiles
  7. 3 cups chicken broth
  8. 1 lime, juiced
  9. 1/4 cup cilantro leaves, chopped
  10. 1 teaspoon chili powder
  11. 1 teaspoon ground cumin
  12. 1 teaspoon fine sea salt
  13. Pinch freshly ground black pepper
  14. Optional: 1 15-ounce can white beans
Serve with
  1. Non-GMO Tortilla Chips
  2. Plantain Chips
  3. Extra Cilantro
  4. Sliced Avocado
  5. Diced Scallions

Instructions

  • Plantain Chips
  • Extra Cilantro
  • Sliced Avocado
  • Diced Scallions
  • Chopped White Onion
  • Additional jalapeño slices
  • Limes

  • Place all ingredients into your slow cooker except for the lime juice
  • Give one good mix to combine spices into the broth

  • Once done, use two forks to shred chicken, and add in lime juice
  • Mix to combine

Stove-Top Instructions: Follow the same instructions, but simmer the soup in a stockpot over low heat for about an hour, until the chicken easily shreds apart.

  First, let’s chat a bit! Remember a few months back I was in Atlanta with some bloggers for a fun Tuttorosso event with Chef Hugh Acheson?

Well, at the event, the Tuttorosso ladies set up a canned tomato tasting and we were all mind blown. Quite literally. I’ve never taste-tested canned tomatoes, because it’s not a typical thing to eat out of a can, and oh my, you guys….There is such a difference it’s really just insane. Between texture, flavor, appearance, color, and so much more. It really is interesting to check out.

SO, I decided to do a little experiment at home to show you.
tuttorossoWe have two different cans, same type of tomatoes (whole, peeled plum tomatoes). I cracked open the cans (not literally cracked), but you get the idea. Just look at the difference between these two tomatoes.

tuttorosso2I wish you could have been in the kitchen with us when we did our little taste test.

Tuttorosso’s tomatoes were hands down the freshest, tastiest, and were uniformed (as you can see). The Tuttorosso can had no peels in the sauce, no taste from the can, etc. Canned tomatoes are used so often in recipes, and for good reason, so it definitely is a fun little experiment to try at home so you can really taste and see the difference in the canned tomatoes you are using!


 Now… to the wings!

The Superbowl is right around the corner. For good measure and for some good taste-testers, I made these wings for last’s week championship game and everybody loved them!

They are perfectly cooked. Saucy, garlicky, and finger-lickin’ good.

For the sauce
  1. 1/4 cup butter
  2. 4 cloves garlic, minced
  3. 1 cup Tuttorosso tomato sauce*
  4. 1 tablespoon chile garlic sauce
  5. 1 tablespoon coconut sugar
  6. 1 teaspoon apple cider vinegar
  7. Pinch fine sea salt
  8. Pinch freshly ground black pepper
  9. Optional: Red pepper flakes
Everything else
  1. 3 lb. chicken wings
  2. 1 teaspoon salt
  3. 1/2 teaspoon black pepper
  4. 1 tablespoon extra-virgin olive oil
  5. Chopped cilantro leaves, for garnish
Instructions
  1. Preheat oven to 350°F
  2. In a small saucepan, heat butter and minced garlic and mix for 2 minutes
  3. Add in additional sauce ingredients and mix to combine
  4. Bring to a boil then reduce heat and let simmer for 10 minutes until thick and slightly reduced
  5. While cooking, toss the wings with salt, pepper, and oil
  6. Line on a baking sheet and bake for 20 minutes, flipping halfway through
  7. Once wings are cooked, remove from the oven and toss with sauce (reserve about 1/3 for dipping)
  8. Place back on baking sheet and place oven on broil (high)
  9. Broil wings for 5 minutes to get them nice and crispy
  10. Serve with additional sauce and fresh chopped cilantro
Notes
  1. *Can use sauce in the whole or diced tomatoes, or blend up 1 cup of the tomatoes.

    Sweet Potato Sliders

    Sliders are a super fun, and super easy football snack that can be totally customizable. This year I’m thinking of making a slider BAR! I’ll put out the sweet potato skins, have everyone make a few of them, toss them in the oven for the remaining 8-10 minutes and BOOM! Superbowl Slider Bar!

    Or… just make a few of these as directed for an awesome appetizer that will fly off your serving tray. Guilt-free deliciousness.

    2. 1 tbsp avocado oil or extra-virgin olive oil
    3. 1/3-1/2 cup guacamole
    4. 1/4 cup salsa
    5. 1/4 cup scallions, chopped
    6. 1 cup pulled chicken, ground beef, or pulled pork
    7. Optional: grass-fed cheddar cheese

      One week from today is the Superbowl! For me, that doesn’t mean much except a fun day for entertaining, good food, and friends. You can find some of my favorite game day recipes here. In college I loved cheese fries. I mean I really loved cheese fries. Pile on chili or gravy and I was set.       • 1. Make chili and set aside
      • 2. Preheat oven to 400
      • 3. Cut sweet potato into wedges
      • 4. In a small bowl, combine spices and oil- mix well
      • 5. Toss sweet potatoes with mixture
      • 6. Place a small rack on baking sheet
      • *TIP: Baking sweet potatoes on a rack will allow all sides to get crispy!
      • 7. Bake for 45 minutes, flipping at 20, or until crisp
