PB + J Granola

With all the flavor of your favorite childhood sandwich, minus the bread, this PB + J Granola is a fun and healthy snack to have on hand! It has tons of fiber, protein and healthy fats, this is about to be your new favorite granola recipe.

Ingredients

  • 4 cups rolled oats
  • 1 cup roasted peanuts
  • 2 tablespoons ground flaxseed
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup drippy peanut butter see notes
  • ¼ cup honey
  • 3/4 cup strawberry jam or jelly store-bought or homemade

Instructions

  • Preheat oven to 350 °F. Line a baking sheet with parchment paper.
  • Add oats, peanuts, flaxseed, cinnamon and salt in a bowl and mix it together . Add in the peanut butter, honey, and jelly and stir together.
  • Transfer the oat mixture to the baking sheet and spread it out evenly. 
  • Bake for 15 minutes, stirring halfway through, until golden brown. Watch carefully to avoid burning.
  • Let cool completely before serving. Store the granola in an air-tight container. It’s best to store in the refrigerator, for up to 3 weeks. It can last at room temperature for a few days.

Notes

Make sure to look for gluten-free oats if you need to be gluten-free
For this recipe, it’s best to use natural peanut butter (or almond butter) which tend to be thinner and more drippy. Typically, you’ll need to stir it together before you use it. If you only have creamy peanut butter, I recommend gently heating up the honey and the peanut butter together first before you add it to the bowl to mix together.
