Bananas Foster Chia Pudding [Video]

Ingredients

  • 1/4 cup chia seeds
  • 1 cup milk of choice
  • 2 teaspoons maple syrup more to taste (see note)

Bananas Foster Topping:

  • 2 large bananas
  • 1/4 cup butter
  • 1/4 cup coconut sugar
  • 1 teaspoon vanilla extract
  • Optional: 2 tablespoons dark rum
  • Optional: 1/4 cup chopped walnuts

Instructions

  • In a container or jar, place chia seeds, coconut milk (or milk of choice), and sweetener. Mix until combined. Let sit for about 5 minutes, and then mix again to remove any clumps.
  • Place your jar or  container into refrigerator for at minimum 3 hours, or better yet, overnight.
  • Once ready to assemble, remove chia pudding from the refrigerator and taste. Adjust sweetener as desired
  • Bananas Foster Topping: In a skillet heat butter until melted. Add in sugar and whisk until combined. Add in vanilla and sliced bananas. Let cook for 2-4 minutes, mixing gently occasionally. Add in optional rum and walnuts. Let cook for an additional 3-4 minutes. Remove and let cool for 5 minutes
  • Layer bananas foster topping on top of your chia seed pudding, in a bowl, mug, or cup!
  • Store the chia seed pudding n the refrigerator for up to 5 days, separate from the topping. Top with the bananas foster topping when ready to eat.

  • You can also omit the sweetener in the chia pudding if you'd like!
