Mint Chip Energy Bites

Mint Chip Energy Bites are the perfect on-the-go no bake energy balls snack. They're easy to make, absolutely delicious, and require absolutely no cooking or baking.

Ingredients

  • 10 medjool dates pitted
  • 1/2 cup coconut flakes
  • 1/2 cup chopped walnuts
  • 1/4 cup cocoa powder
  • 1/8 teaspoon peppermint extract
  • Pinch of fine sea salt
  • 2 tablespoons mini chocolate chips

Instructions

  • Add dates to your food processor and process until broken up into pea-sized bits.
  • Add in coconut flakes, walnuts, cocoa powder, peppermint extract, and a pinch of salt.
  • Process until well-combined. Mixture should come together into a large ball. Mix in the chocolate chips.
  • Roll the mixture into 15 roughly 1-inch balls.
  • Place in the freezer for 15 minutes before storing in the refrigerator for up to one month.
