Ingredients
1 2-ouncepackage prosciuttoroughly chopped
2teaspoonsolive oil
2garlic clovesminced
1/2teaspoonred pepper flakes
2cupsgrape tomatoes1 pint
½teaspoonfine sea salt
1pieceof burrata8 ounces
4cupsmarinara sauce
Bread or crackersfor serving
1package pasta of choice
1cupmozzarella cheese
Fresh basilfor garnish
Red pepper flakesfor garnish
Instructions
Preheat oven to 350°F.
Heat 1 tablespoon of avocado oil in a small skillet over medium. Once hot, add prosciutto and cook for 2 minutes, then flip and cook another 2 to 4 minutes until crispy. Set aside.
In the same skillet once prosciutto is removed, add more oil if needed (1 tablespoon), the garlic and red pepper flakes and cook for 2 minutes until fragrant. Add the tomatoes and let them cook until they burst, about 10 minutes, stirring often.
Add marinara into the tomato mixture and simmer to cook sauce down for 10 minutes.
Pour marinara sauce to a 13×9 inch baking dish (or similar size) and place the ball of burrata in the center.
Bake in the preheated oven for 15 minutes, or until the cheese is warmed through and slightly melted.
While baking, cook your pasta based on package instructions and set aside.
Top with crispy prosciutto and pour in pasta and mix to combine.
Top with mozzarella cheese and bake for an additional 10 minutes until the cheese is melted and bubbly. Serve hot. Garnish with fresh basil if desired.
