Ingredients
1onionsliced
4garlic clovesminced
1tablespoonminced ginger
2tablespoonscurry powder
2teaspoonscoconut sugar
1teaspoonfine sea salt
1/2teaspoonblack pepper
Pinchred pepper flakesmore to taste
1 14-ouncecan full-fat coconut milk
1tablespoonfish sauce
1limejuiced
1teaspoonsesame oil
1 1/2poundboneless chicken breasts
Cilantrofor serving
Chopped scallionsfor serving
Instructions
Place sliced onion in the bottom of the insert of your slow cooker.
Add coconut milk, garlic, ginger, fish sauce, lime juice, sesame oil, sugar, and spices. Toss to combine.
Add in chicken and mix to coat.
Set on high for 4 hours. When done, shred with two forks.
