1egg white
1teaspoonwater
1/4cupmaple syrup
2teaspoonsvanilla extract
2tablespoonsfresh rosemaryfinely minced
1 1/2teaspoonsea saltsprinkle more at the end

3-4cupsraw unsalted mixed nuts of choicecashews, walnuts, peanuts, almonds, etc.
Instructions
Beat the egg and water: In a bowl, beat together the egg white and water until frothy.

Mix the candy coating: In a separate bowl, combine the maple syrup, vanilla, rosemary, salt, cayenne, and paprika, if using.
Coat and bake: Toss the nuts in the egg white mixture, then transfer to the spice mixture and stir until evenly coated. Transfer to a baking sheet and bake at 250ºF for 30 minutes, flipping every 10-15 minutes. Watch to avoid burning.
