Ingredients

  • 1 egg white
  • 1 teaspoon water
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 tablespoons fresh rosemary finely minced
  • 1 1/2 teaspoon sea salt sprinkle more at the end
  • 1/2 teaspoon cayenne optional
  • 1 tsp paprika
  • 3-4 cups raw unsalted mixed nuts of choice cashews, walnuts, peanuts, almonds, etc.

Instructions

  • Beat the egg and water: In a bowl, beat together the egg white and water until frothy.

  • Mix the candy coating: In a separate bowl, combine the maple syrup, vanilla, rosemary, salt, cayenne, and paprika, if using.

  • Coat and bake: Toss the nuts in the egg white mixture, then transfer to the spice mixture and stir until evenly coated. Transfer to a baking sheet and bake at 250ºF for 30 minutes, flipping every 10-15 minutes. Watch to avoid burning.
