Vegan Green Goddess Dressing
Vibrant, bright and so delicious, this Green Goddess dressing works equally as well as a dip or as a dressing for a salad. This version is made vegan and healthy by replacing some of the standard ingredients with heart-healthy avocados.

Servings: 1 -1/2 cups dressing

- 1 medium to large ripe avocado
- ½ cup water more as needed
- ¼ cup olive oil
- 3-4 tablespoons lemon juice
- 1 packed cup of picked herbs see note
- 1 teaspoon tarragon
- 1 garlic clove
- ½ teaspoon salt more to taste
Add all ingredients to a blender and blend until smooth and creamy. If needed, you can add in a tablespoon of water to aid it in blending together.
Taste and adjust seasoning, adding in more lemon juice or salt and pepper.
I love how versatile this recipe is in terms of what herbs you add. Adding a mixture of herbs, on top of the added tarragon adds a great flavor. Here are some of our favorite herbs to add to this dressing:
- cilantro
- dill
- parsley
- basil
- chives
