- 3 tablespoon olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Pinch of red pepper flakes
- 2 large cucumbers thinly sliced
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh mint
In a large bowl combine oil, lemon juice, mustard, salt, garlic powder, pepper and red pepper flakes and whisk to combine.
Add in the sliced cucumbers and fresh herbs and toss to combine.
Let sit for about 10 minutes, season to taste and then serve.
