Ingredients

  • 3 bananas more as desired
  • 1 cup creamy peanut butter
  • 1 cup finely chopped peanuts
  • 1 1/2 cups chocolate chips
  • 2 teaspoons coconut oil
  • Flakey sea salt as desired, for garnish

Instructions

  • Prep the bananas: Cut each banana in half, then gently pierce each with a popsicle stick in the center to form a popsicle shape.
  • Add the peanut coating: Gently coat each banana in creamy peanut butter (I use a knife), then dip or roll in crushed peanuts.
  • Melt chocolate: In the microwave or over a double boiler, melt together chocolate chips and coconut until. Stir until smooth, then dip or drizzle the bananas in the chocolate. Top with flakey sea salt if desired.
  • Freeze: Place the assembled chocolate covered bananas onto a lined baking sheet and freeze until firm.
  • Serve: I like these best when they sit out of the fridge for 10 minutes or so, so they aren’t rock hard when biting into them!
