Ingredients

  • 3 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Pinch of red pepper flakes
  • 2 large cucumbers thinly sliced
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint

Instructions

  • In a large bowl combine oil, lemon juice, mustard, salt, garlic powder, pepper and red pepper flakes and whisk to combine.
  • Add in the sliced cucumbers and fresh herbs and toss to combine.
  • Let sit for about 10 minutes, season to taste and then serve.
