Cut bread into sticks , set aside.
In a shallow bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon and salt.
Heat a large non-stick skillet over medium heat. Add 1 tablespoon ghee (or other high-heat cooking oil_ to the pan.
Place bread pieces into the egg mixture covering each side of the bread, then into the hot pan. Repeat, placing more bread into the pan, but leaving about 1” in-between pieces. Cook for 2-3 minutes on each side.
Remove and repeat the process, adding more ghee to the pan until all of the french toast is cooked.
Either serve immediately with powdered sugar and maple syrup, or cool completely and store in the freezer.
