Pancake and Waffle Mix

This Gluten Free Pancake Mix is the perfect DIY gift or breakfast prep recipe! It's gluten-free, grain-free, and makes the best pancakes or waffles. Keep it in your pantry or tie it up with a ribbon and gift it for the holidays!

Ingredients

Single Batch:

  • 1/2 cup blanched almond flour
  • 1/2 cup tapioca flour
  • 1 teaspoon baking powder
  • Pinch of fine sea salt
  • Makes: 1 cup of mix 2 waffles (eight individual pieces total or 8 3- to 4-inch pancakes
  • Labels have instructions on how to make the waffles/pancakes

Double Batch:

  • 1 cup blanched almond flour
  • 1 cup tapioca flour
  • 1 1/2 teaspoon baking powder
  • Pinch of fine sea salt
  • Makes: 1 cup of mix 4 waffles (sixteen individual pieces total or about fourteen to sixteen 3- to 4-inch pancakes
  • Labels have instructions on how to make the waffles/pancakes

Large Batch

  • 4 cups almond flour
  • 4 cups tapioca flour
  • 2 tablespoons baking powder
  • Pinch fine sea salt

Instructions

  • In a large bowl or a large mason jar, mix together almond flour, tapioca flour, baking powder, and sea salt.
  • Store in an airtight container in the pantry for 2 weeks, or in the fridge for up to one month.

When you’re ready to make pancakes, just gather up a couple of eggs, vanilla, and unsweetened applesauce to make the batter.
Single batch wet ingredients: 
  • 2 eggs
  • 1 teaspoon vanilla 
  • 1/4 cup apple sauce
  • butter / ghee for cooking
Double back wet ingredients:
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup
