Salad Roll-Ups (No Cooking Appetizer!)

These salad rollups are a fun and healthy appetizer that is gluten-free, light, and requires no cooking! Plus, they are easy to make and customizable!

  • 1/4 cup avocado or olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • Pinch of fine sea salt
  • 3 cups mixed greens
  • 1 lb. thinly sliced charcuterie prosciutto, salami, capicola, or even turkey

Optional Additions:

  • Slices of Cheese
  • Julienned Cucumbers
  • Julienned Carrots
  • Avocado
  • Tomato Slices
  • Basil
  • Pepperoncini
  • Roasted Red Pepper
  • Sliced Dried Figs
  • Fig Jam


  • Add avocado oil, apple cider vinegar, dijon mustard, honey, and pinch of salt and pepper to a jar. Shake vigorously until combined. Add mixed greens to a large bowl and pour half of the dressing over the top. Toss together to combine, adding more dressing if necessary.
  • On a work surface, lay flat a slice of charcuterie.
  • Place a few dressed mixed greens and any add-ins on the bottom half of the meat slice and roll them up. Put a toothpick through the center. Place on a plate and serve!
