Salad Roll-Ups (No Cooking Appetizer!)
These salad rollups are a fun and healthy appetizer that is gluten-free, light, and requires no cooking! Plus, they are easy to make and customizable!

- 1/4 cup avocado or olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon dijon mustard
- 1/2 teaspoon honey
- Pinch of fine sea salt
- 3 cups mixed greens
- 1 lb. thinly sliced charcuterie prosciutto, salami, capicola, or even turkey
Optional Additions:
- Slices of Cheese
- Julienned Cucumbers
- Julienned Carrots
- Avocado
- Tomato Slices
- Basil
- Pepperoncini
- Roasted Red Pepper
- Sliced Dried Figs
- Fig Jam
Add avocado oil, apple cider vinegar, dijon mustard, honey, and pinch of salt and pepper to a jar. Shake vigorously until combined. Add mixed greens to a large bowl and pour half of the dressing over the top. Toss together to combine, adding more dressing if necessary.
On a work surface, lay flat a slice of charcuterie.
Place a few dressed mixed greens and any add-ins on the bottom half of the meat slice and roll them up. Put a toothpick through the center. Place on a plate and serve!
