- 4 boneless pork chops about 6 ounces each, trimmed
- 1 tablespoon avocado oil
- 1 large onion halved and sliced ¼ thick
- 2 apples cored and sliced into 8 pieces each
- ½ cup fresh apple cider
- 1 tablespoon dijon mustard
- 2 tablespoons chopped fresh sage
- 1 teaspoon fine sea salt
- 1 teaspoon fresh ground pepper
Preheat oven to 400ºF.
Pat pork chops dry with a paper towel and season with salt and pepper.
Heat oil in a large cast iron pan over medium-high heat. When hot, sear pork chops, until browned, about 2-3 minutes per side. Remove from pan and set aside.
Add in onions and apples and saute until beginning to soften and brown, about 5 minutes.
Carefully add in the apple cider, mustard, sage and salt and pepper and cook for 2 minutes until the cider is reduced by half making sure to scrape up any browned bits.
Return the pork chops to the pan and place in the oven and cook for 6-8 minutes until an internal temperature reaches 145º or until cooked to desired temperature.
Serve hot with
mashed potatoes,
cauliflower rice or steamed veggies.
