  • 4 boneless pork chops about 6 ounces each, trimmed
  • 1 tablespoon avocado oil
  • 1 large onion halved and sliced ¼ thick
  • 2 apples cored and sliced into 8 pieces each
  • ½ cup fresh apple cider
  • 1 tablespoon dijon mustard
  • 2 tablespoons chopped fresh sage
  • 1 teaspoon fine sea salt
  • 1 teaspoon fresh ground pepper


  • Preheat oven to 400ºF.
  • Pat pork chops dry with a paper towel and season with salt and pepper.
  • Heat oil in a large cast iron pan over medium-high heat. When hot, sear pork chops, until browned, about 2-3 minutes per side. Remove from pan and set aside.
  • Add in onions and apples and saute until beginning to soften and brown, about 5 minutes.
  • Carefully add in the apple cider, mustard, sage and salt and pepper and cook for 2 minutes until the cider is reduced by half making sure to scrape up any browned bits.
  • Return the pork chops to the pan and place in the oven and cook for 6-8 minutes until an internal temperature reaches 145º or until cooked to desired temperature.
  • Serve hot with mashed potatoes, cauliflower rice or steamed veggies.
