Spiced Roasted Cauliflower

- 1 large cauliflower cut into florets (roughly 20 ounces or 6 cups cups)
- 2 tablespoons extra-virgin olive oil
- 1 14.5- ounce can crushed tomatoes or diced tomatoes
- 2 garlic cloves minced
- 1 onion sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes optional
- Fresh parsley leaves chopped, optional, for garnish
Preheat oven to 400°F.
Mix all ingredients in a large bowl and mix until completely coated.
Place cauliflower mixture onto a lined baking sheet and roast for 20 minutes, until fork tender and golden.
Garnish with parsley and serve immediately with your favorite protein.
