Cranberry Walnut Roasted Acorn Squash

This Cranberry Walnut Roasted Acorn Squash is the perfect Fall side dish, and perfect for Thanksgiving. The roasted onion and fresh cranberries give it warm bursts of delicious flavor, and the walnuts add a fabulous crunch!

Ingredients
  1. 2 garlic cloves, minced
  2. 1 acorn squash, sliced
  3. 1 red onion, sliced
  4. 1 cup fresh cranberries
  5. 2 tablespoons extra-virgin olive oil
  6. 1/2 teaspoon fine sea salt
  7. 1/4 teaspoon black pepper
  8. 1/2 teaspoon cinnamon
  9. 1 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
  10. 1 tablespoon honey or maple syrup
  11. 1 cup walnuts
  12. Optional: Sage leaves for garnish
Instructions
  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Drizzle veggies and cranberries with oil, spices, ginger, and honey.
  3. Roast for 40 minutes until fork tender.
  4. Add the walnuts and bake for an additional 5 to 10 minutes.
  5. Garnish and serve hot.
