Prosciutto Wrapped Glazed Shrimp

From a Thanksgiving spread–complete with turkey and stuffing, creamy green bean casserole, and all of the quintessential pies. There’s also menus for both Christmas breakfast and dinner; a New Year’s Eve cocktail party, a Father’s Day menu, and Easter brunch. 

I cannot wait to dive and and make the Grain-Free Corn Bread, the Fudge, and the Peach Cobbler!

Prosciutto Wrapped Glazed Shrimp

Ingredients
  1. ½ cup dried unsulfured apricots
  2. 1 ¼ cups water
  3. ¼ cup pure maple syrup
  4. ½ teaspoon chili powder
  5. ¼ teaspoon cayenne pepper
  6. 2 pounds jumbo raw shrimp (about 40 pieces), peeled and deveined with tails on
  7. 8 ounces prosciutto, sliced into thin ribbons
Instructions
  1. Preheat the oven to 425 °F. Line a baking sheet with parchment paper.
  2. To make the glaze, combine the apricots in a saucepan with ¾ cup of the water, the maple syrup, chili powder, and cayenne. Bring to a boil and simmer for 10 minutes, or until most of the liquid has evaporated and the apricots are rehydrated.
  3. Transfer the mixture to a blender and add the remaining ½ cup water. Blend until smooth.
  4. Wrap each shrimp with prosciutto and place, seam side down, on the baking sheet. Brush with glaze.
  5. Bake to 10 to 12 minutes, until the shrimp are opaque throughout. Brush again with the glaze midway through. Serve hot.

The holidays and New Years Eve are quickly approaching. I mean, how is it already mid-December, you guys? SCARY. The holiday spirit is strong, and we are surrounded by family and friends! What else could we ask for? Ahem… GOOD FOOD! Yes? Yes!

This means we need to get some appetizers ready for the holidays, NYE, or just a healthy *EASY* bite amid all the crazy shopping days and busy holiday times. Did I mention no cooking required? BOOM.

You'll need
  1. 1/2-1 lb. prosciutto, or thinly sliced cured meat of choice
  2. 3 cups mixed greens
Dressing
  1. 1/4 cup avocado or olive oil
  2. 1 tablespoon apple cider vinegar
  3. 1 teaspoon dijon mustard
  4. 1/2 teaspoon honey
  5. Pinch of fine sea salt
Optional Additions
  1. Slices of Cheese
  2. Julienned Cucumbers
  3. Julienned Carrots
  4. Avocado
  5. Tomato Slices
  6. Basil
  7. Pepperocini
  8. Sliced Dried Figs
  9. Fig Jam
Instructions
  1. In a bowl, whisk together dressing ingredients. Drizzle dressing over mixed greens and toss to combine.
  2. On a cutting board, gently place slices of prosciutto.
  3. Place mixed greens and any add-ins on the bottom half of the prosciutto and roll them up. Put a toothpick through the center. Place on a plate and serve!
Notes
  1. Store in the refrigerator until serving.

Now… New Years Eve is upon us. If you’ve been around my website for a while, you know that I love to entertain. Dinner parties, holidays, football Sunday’s- any excuse, I’m in! These Bacon Wrapped Chicken Bites are the perfect bite-size appetizer for your NYE festivities. Bursting with a hint of sriracha and lime flavors plus… bacon!

Bacon Wrapped Sriracha Lime Chicken Bites

Bacon Wrapped Sriracha Lime Chicken

Chicken Marinade
  1. 1 lb. organic chicken, cubed
  2. 3-4 tbsp sriracha
  3. 1/2 lime, juiced
  4. Dash sea salt
  5. Dash freshly ground pepper
Everything else you'll need
  1. 1 package nitrate-free bacon
  2. Pack of serving toothpicks
  3. Serving Tray
Instructions
  1. Preheat oven to 350
  2. Line a baking sheet with baking liner
  3. Cut chicken into cubes
  4. In a mixing bowl, combine cubed chicken and marinade- mix well to combine
  5. Allow chicken to marinade anywhere from 20 minutes to 3-4 hours
  6. Cut bacon slices in half*
  7. Roll chicken in bacon and stick toothpick through, continue until all of the chicken is used
  8. Bake for 25-30 minutes
  9. Broil for 3-5 minutes or until bacon is crispy**
Notes
  1. *Cut bacon based on size of your chicken pieces
  2. **Watch the oven carefully when broiling, don't put on the top rack when you have toothpicks in!
