Perfect Roasted Veggies

Thanksgiving is quickly approaching. I don’t know about you, but the menu planning is the best part! You can get creative while pooling your favorite dishes for a fantastic spread. I’m super excited to get you ready for your big dinner with some show-stopping dishes that’ll be devoured right off of the table. Whether you are hosting at your house, are a guest bringing a dish, hosting a “Friendsgiving”, or just looking for a delicious veggie side, this dish is for you!

Ingredients
  1. 10-15 rainbow carrots
  2. 3 cups Brussels sprouts, sliced
  3. 1 large red onion, sliced
  4. 1 acorn squash or squash of choice, sliced
  5. 2 cups purple seedless grapes
  6. 1/4 cup extra-virgin olive oil (code LEXI for 10% off)
  7. 6 garlic cloves, crushed
  8. 2 sprigs thyme
  9. 4 sprigs of sage
  10. 1-2 teaspoons fine pink sea salt
  11. 1/2 teaspoon pepper
  12. Optional: 2 tablespoons raw honey
Instructions
  1. Preheat oven to 400°F
  2. In a bowl, combine sliced onion, Brussels sprouts, carrots, squash, and grapes
  3. Add in oil, garlic, salt, and pepper
  4. Toss to evenly combine
  5. Line a baking sheet and spread out veggies across it
  6. Top with thyme and sage
  7. Roast for 45-50 minutes, tossing halfway through
  8. Once soft and tender, remove from the oven
  9. Remove any stems (from grapes and herbs)
  10. If adding honey, add while veggies are warm and toss
  11. Add additional salt and pepper as desired and serve hot

WHAT! February is here. How did that happen?

January was all about kick-starting that clean eating for the year with Whole30’s, 21DSD’s, and so on and let me start by saying let’s KEEP IT UP! Dry Ingredients
  1. 1/4 cup blanched almond flour
  2. 1/4 cup tapioca flour
  3. 1/4 cup + 1 tbsp good quality cocoa powder
  4. 1/2 tsp baking powder
  5. 1/8 tsp sea salt
  6. 1/3 cup dark chocolate chips/chocolate chunks
Wet Ingredients
  1. 1 egg
  2. 2 tbsp almond butter
  3. 3 tbsp raw honey
  4. 1 tsp vanilla
  5. 1/3 cup almond milk
Creamy Raspberry Swirl
  1. 1/3 cup cashew cream*
  2. 1/2 cup raspberries
  3. Additional 1/2 cup raspberries
Instructions
  1. Preheat oven to 350
  2. Line a baking dish (8x8) with parchment paper or grease your baking dish
  3. In a mixing bowl sift together dry ingredients, except for the chocolate chips
  4. Add in wet ingredients and mix until combined
  5. Add in chocolate chips
  6. Pour into baking dish and set aside
  7. In your high-speed blender add 1/2 cup raspberries to your existing cashew cream* and blend until smooth
  8. Place a few dollops into your brownie batter and swirl with a fork or a tooth pick
  9. In a small bowl, smash the remaining raspberries with a fork until blended together
  10. Swirl the smashed raspberry mixture into the brownies as well
  11. Bake for 25-30 minutes or until a toothpick comes out clean
Notes
  1. *Cashew Cream: Soak 2 cups of cashews in water (water filled just to the top of the cashews) for 3-4 hours - overnight, the longer the better. Once soaked, remove from water, place in a high-speed blender with 1 tbsp fresh water and blend until smooth and creamy.
