Hello perfect dairy free summer dessert recipe! This no-bake stress-free summer time treat is perfect for when you are craving something a little sweet but still want to keep it healthy and nutritious. This would also be a fun and seasonal 4th of July parfait to serve with the red and blue berries! Don’t want to use berries? You could also mix it up with some stone fruits like peaches or nectarines as well.

Sometimes simple is better, and this four ingredient dessert is it.

  1. Look for coconut cream instead of coconut milk. It will give you more of the solid part of the coconut milk that you need to whip up.
  2. You absolutely must refrigerate your coconut cream. We recommend doing so for 24 hours, but if you are in a pinch, 8 hours will work.
  3. Use powdered sugar as a sweetener. It helps thicken the consistency of the coconut cream. If you were avoiding refined sugar you could use honey, but it will result in a thinner whipped cream.
  4. Add vanilla to give it an extra flavor boost!
  5. Serve immediately. You can make it up to 4 hours ahead of time, but it can harden back up in the refrigerator if it’s left for much longer.
  6. If it does stiffen up too much in the refrigerator you can rewhip it again to get it to a consistency you desire.

  1. 1 can coconut milk, refrigerated for at least 4 hours
  2. 1/2 teaspoon organic vanilla extract
  3. 2 tablespoons powdered sugar
  4. 1-2 cups fresh organic berries (or fruit of choice)
  5. Optional: Garnish with fresh mint
  1. Scoop out the top thick layer of coconut cream from the chilled coconut milk can into a large bowl. You can save the liquid for later to use in smoothies.
  2. Using a hand mixer or whisk, whisk coconut cream until it becomes light and creamy.
  3. Using a jar of choice, layer fruit and coconut whipped cream
  4. Garnish with mint and serve
  1. Tip: I always keep a can of coconut milk in the fridge in case I want to throw together a dessert with whipped cream

This vinaigrette screams summertime! Made with fresh strawberries, tart balsamic vinegar and salt and fresh ground black pepper to round it all out it will be perfect for a spring or summer salad! I also like to use it as a marinade for chicken of for a tart and sweet dip for fruits or veggies. 

It’s a great way to use up all those fresh, ripe strawberries! They can be slightly overripe, just be sure to test a strawberry from your batch to make sure it tastes good on it’s own.
