Double chocolate? And guilt-free? Yes please! These moist double chocolate muffins do the trick; because sometimes you just need a treat (in moderation)! Eat them plain or top them with some melted chocolate of choice for a delicious dessert option.

Ingredients:
  • 3/4 cup almond meal
  • 1 1/2 tbsp unsweetened cocoa powder
  • 3 tbsp Enjoy Life’s mini chocolate chips
  • 1/4 tsp baking soda
  • Pinch of salt
  • 3 eggs
  • 3 tbsp coconut oil
    • (UPDATE: I subbed this for 3 tbsp unsweetened organic apple sauce and found they were much more moist, my new go-to)
  • 3 tbsp pure organic raw honey
  • 1 tsp vanilla extract
  • Optional: Add 1/2 scoop protein powder

Directions:

  1. In one bowl combine almond meal, cocoa powder, salt, and baking soda- mix well until smooth
  2. In a separate bowl combine eggs, coconut oil, honey, and vanilla extract- whisk together
  3. Combine the wet and dry ingredients, add in the chocolate chips, and mix well
  4. Pour into sprayed muffin pan (I use silicone muffin tins)
  5. Bake on 350 for 10 minutes, or until a toothpick comes out clean

‘Whipped Cream’ Frosting:

Ingredients: 

  • 1 can organic coconut milk (full-fat), refrigerated
  • 1/2 tsp organic vanilla extract
  • Optional: 2 drops liquid vanilla stevia or 1/2 tsp raw honey (or sweetener of choice)

Tip:  I always keep a can of coconut milk in the fridge in case I want to throw together a dessert with whipped cream

Directions:

  1. Turn can upside-down and open with can opener, and pour out liquid
  2. Scoop out the top (thick) part of the coconut milk from chilled can
  3. Place in bowl, add vanilla and add sweetener of choice
  4. Whisk together well for 2 minutes, or until fluffy (whisk or immersion blender)
  5. Glaze each muffin
  6. Store in fridge

Note: The whipped cream will firm up much more in the fridge
