Vibrant, bright and so delicious, this Green Goddess dressing works equally as well as a dip or as a dressing for a salad. This version is made vegan and healthy by replacing some of the standard ingredients with heart-healthy avocados. With tons of herb flavor, this dressing is soon to be a favorite.
Vegan Green Goddess Dressing
A good green goddess dressing should be creamy, bright, and unbelievably herby. This Healthy Green Goddess dressing is all of that and more! But this recipe switches things up a bit by using ripe avocados in place of the typical mayo or greek yogurt. Using avocado not only leaves this a bit healthier because of all of the extra fiber and healthy fats, but it also makes this dressing ultra-creamy without any dairy at all!
The avocadoes are blended up with the herbs, lemon and garlic resulting in the most deliciously addictive dip!
Ingredients Needed
- Avocado
- Olive Oil
- Water (this is to help get the blending started since there isn’t a lot of added liquid)
- Lemon Juice
- Fresh Herbs (see below)
- Tarragon
- Garlic
- Salt
Wait, no anchovy? Correct! We’ve skipped out on the anchovy with this dressing, just simply because most people don’t have it on hand. If you want to add it in, you can.
Substitutions
Oil: You can switch in your favorite oil here. We recommend olive oil or avocado oil. It only calls for a small amount since we’re also including avocado here.
Lemon juice: If you don’t have fresh lemon juice, lime juice could work in a pinch. Potentially another vinegar, such as white wine vinegar or apple cider vinegar might work, but I suggest starting with half the amount. And then adding in more if necessary.
Tarragon: This is a very classic flavor for this dressing. If you can’t find it, you can omit it.
What Herbs Work Well
This dressing is pretty flexible and forgiving with what herbs you add in, and in what quantities. The recipe calls for about 1 cup of packed fresh herbs. What you actually add in is up to you. The dressing is much better when there is a variety, so try to add in at least two to three different herbs. What you add in can depend on what you have on hand, and of course what you like! Here are our recommendations:
- Cilantro
- Parsley
- Dill
- Chives
- Basil
You’ll notice tarragon is called for in addition to the one cup of fresh herbs. That is because tarragon a pretty classic flavor for this dressing so we wanted to make sure it was included. But we also didn’t want anyone to add in too much because the flavor can go from delightful to overwhelming really quick. That is why we left it as a stand-alone ingredient with a specific amount.
Amping up the Health Factor
Want to add in just a bit more nutrition? Go ahead and throw in a handful of baby spinach or other greens, such as baby kale. You can add in a bit of nutrient-rich greens without changing the flavor too much.
How to Make It
I love how easy it is to make this dressing–simply add all of the ingredients to the blender, and blend until smooth and creamy. The one trick though is that if you have a very large blender basin, you may find it difficult to blend it, since the quantity of ingredients is small.
A typical blender will work just fine, but if it’s an extra-large basin, you may have to double the recipe to get it to blend well.
A high-speed blender will make quick work of this dressing, but if you have a standard blender you can use an additional tablespoon of water to help get the dressing going if need be.
How to Use Green Goddess Dressing
Oh, how the ways are endless! Honestly, this is one of those dressings you just can’t help eating with a spoon. It’s so delicious! But in all seriousness, this dressing is great as a dip with a bunch of fresh-cut veggies. Or it works well on a salad! It is on the thicker side though, so you want to make sure your salad greens will hold onto it well. Romaine or other hearty and crisp salads greens taste delicious with this.
