These 4-Ingredient Chai Popsicles are one of my favorite summer treats! They’re simple to make and loaded with the flavor of sweet spices. These popsicles are refined sugar-free, dairy-free, paleo, and so tasty.
Easy and Healthy Homemade Popsicles
Summertime means it’s popsicle season. And if you’re a chai fan like I am, then these 4-Ingredient Chai Popsicles are the sweet treat for you.
These healthy popsicles are creamy, flavorful, and the perfect way to cool down on a hot summer day.
Because what’s better than a creamy popsicle that’s packed with flavor and has none of the added refined sugars of store-bought popsicles?
What Are the Ingredients in a Popsicle?
- Milk: I use almond milk, but feel free to use whatever milk you have on hand.
- Honey: My natural sweetener of choice.
- Vanilla Extract: Adds warmth and flavor depth.
- Chai Spice: A perfect blend of cardamom, allspice, cinnamon, cloves, and ginger.
How to Make Popsicles
- Although you do need to wait for the healthy popsicles to freeze, the actual preparation of this recipe is so quick! Blend: In a blender, combine almond milk, honey, vanilla, and a tablespoon of chai spice mix. Blend until smooth, then taste and adjust the spice/sweetness as needed.
- Portion and freeze: Pour the mix into your popsicle molds, add in the popsicle sticks, and freeze for a minimum of 5 hours.
What is Chai Flavor?
Chai spice is a delicious blend of sweet, warm spices. The ingredients and amounts can vary slightly, but here is what I used for this recipe:
- Cardamom
- Allspice
- Cinnamon
- Cloves
- Ginger
Note: For this recipe, you’ll make a slightly larger amount of chai spice than you’ll end up needing. BUT, you can store the rest and use it for any other chai recipes. It will keep for up to a year in your cabinet—assuming the spices you start with are fresh.
How Do You Make Popsicles Without Ice Crystals?
Fortunately, the key to avoiding ice crystals in popsicles is to use a creamy base, which is exactly what we are doing with the almond milk in these popsicles.
Additionally, I recommend storing the popsicles at the back of your freezer. The spots in the freezer closer to the door have a more unstable temperature from opening and closing the freezer. This variance in temperature can cause ice crystals to form.
Tips and Notes
- Leave plenty of time for freezing. I recommend a minimum of 5 hours or overnight to give the popsicles time to freeze fully.
- The popsicles will naturally separate as they freeze. This is normal! All it does it give them a beautiful look and a total flavor experience with each bite.
- If you don’t have a popsicle mold, you can use paper cups. However, I do recommend a popsicle mold if you can get your hands on one. They are worth it!
Variations
- Make dirty chai popsicles. Love to add espresso to your chai? Try adding some espresso to the blender for a flavor twist and a boost of caffeine.
- Use another milk. I love using almond milk in this recipe, but feel free to use whatever milk you have on hand.
- Make them vegan. These are already non-dairy thanks to the almond milk, but if you want to make these sugar free popsicles fully vegan friendly, simply swap the honey out for maple syrup.
How to Easily Get Popsicles Out of the Mold
There are a few tricks you can use to get popsicles out of the molds but the easier one I’ve tried so far is to stick the popsicle mold in a big bowl of hot water. Place the entire mold inside of the water, making sure though not to get any of the water inside of the popsicles. Leave it in there for about 30 seconds and remove. Then all of the popsicles should easily pop out! If you have individual molds then you can stick each popsicle in a tall glass of hot water.
Or you can just run the molds under hot water from the tap if you can’t fit it in a bowl.
How to Store
Unlike popsicles you buy at the store, we find that these popsicles are best eaten with 1 to 2 weeks. The fresher the better.
With proper storage and temperature control, these homemade popsicles will last in the freezer for up to 3 months.
Keep in mind, the longer they are stored, the higher the risk of ice crystals forming.
What Popsicle Molds are the Best?
There are so many fun popsicle molds on the market these days! You can get silicone ones, stainless steel ones or plastic ones!
We actually have one of each, but always come back to this classic plastic version, because it holds up well and we like the shape of popsicle it makes. Just be sure to hand wash it in warm soapy water, as opposed to hot water or in the dishwasher. Here are some other favorite popsicle molds we like:

4-Ingredient Chai Popsicles
Ingredients
- Chai Spice Mix: 1 tablespoon is used for this recipe
- 1/2 teaspoon cardamon
- 1/2 teaspoon all spice
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 1/2 teaspoons ginger
Everything else:
- 2 cups almond milk
- 1 tablespoon honey or maple syrup more as desired
- 1 teaspoon vanilla extract
Instructions
- Place almond milk, honey, vanilla and 1 tablespoon of chai spice mix into your blender and blend until smooth. Taste and adjust honey and spice mix as desired.
- Pour into popsicle molds and add in your popsicle sticks.
- Freeze for 5 hours or up to overnight.
