Garlic Roasted Vegetables

These Garlic Roasted Vegetables are a simple side dish to pair with any meal! I love roasting a ton of seasonal veggies and keeping them in my fridge to pair with any dish throughout the week. Tonight I served these with a simple roasted salmon and they complimented it perfectly!

  • 1 cup brussels sprouts, sliced in half
  • 1 cup organic asparagus, sliced into bite-sized pieces
  • 1 head of broccoli, sliced into bite-sized florets
  • 2 tablespoon extra-virgin olive oil
  • 3 garlic cloves, crushed
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper


  1. Preheat oven to 400.
  2. Line baking pan with foil.
  3. Cut vegetables and drizzle with oil, salt, pepper, and crushed garlic.
  4. Toss so all the vegetables are coated.
  5. Roast for 30-40 minutes or until fully cooked (I like mine a drop crispy so I turn on broil for about 3-5 minutes at the end).

*Add in any seasonal vegetables you have on hand!
