Saucy Bacon & Chorizo Baked Eggs

I want to introduce you to a a new addition on Lexi’s Clean Kitchen called Savory Sunday’s! I’ve been doing a ton of blog-reflecting lately and decided that I want to be more consistent for you all. Aside from other posts throughout the week, Tuesday’s and Sunday’s will now be dedicated to specific tastes! You can always stop by on Tuesday’s for a treat, and on Sunday’s for a savory meal idea.SAVORY SUNDAYS

Saucy Bacon & Chorizo Baked Eggs

  1. 2 garlic cloves
  2. 1 tsp extra-virgin olive oil
  3. 1 onion, sliced
  4. 2 handfuls spinach
  5. 2 strips nitrate-free bacon, cooked
  6. 3 organic chicken sausage chorizo, sliced
  7. 1 can organic diced tomatoes
  8. 2 tbsp tomato paste
  9. 1/2 tsp paprika
  10. 4 organic eggs
  11. Himalayan sea salt, to taste
  12. Freshly ground pepper, to taste
  13. 1/2 tsp cumin
  14. Optional: 1 15 oz. can beans of choice
  1. 1. Preheat oven to 350
  2. 2. In a cast iron skillet on the stove, heat oil and garlic
  3. 3. Add in onion and and let cook for 5 minutes, stirring often
  4. 4. Add in spinach and sauté for 2-4 minutes until cooked down
  5. 5. Add in chorizo, diced tomato, and tomato paste and mix well- let cook together for an additional 5 minutes until sauce begins to thicken, then add bacon pieces
  6. 6. Remove from heat and using a spoon, make 4 egg indentations in the mixture
  7. 7. Gently crack in eggs
  8. 8. Place skillet in oven and let bake for 15-20 minutes until egg whites are cooked
