Why You’ll Love These Raspberry White Chocolate Protein Balls

I meal prep pretty much every week, making breakfasts, lunches, and dinners like my meal prep frozen burritos, Thai turkey meal prep bowls, and meal prep green goddess chopped chicken slaw. I always throw in a few snacks, too, and these raspberry white chocolate protein balls are one everyone in my family loves!

These are also a staple any time I’m prepping make-ahead recipes for the arrival of a baby for friends and family. Packed with nutrition and easy to eat, they’re the perfect option for middle-of-the-night feeds and one-handed afternoon snacks.

Foolproof, no-bake, and made with just 10 ingredients, these energy bites are super easy to prepare. My kids always have fun helping to stir. Just combine everything in a bowl, portion, and enjoy!

  • Oats: Make sure to use old-fashioned oats or rolled oats, not quick oats or steel-cut oats. If needed, look for certified gluten-free oats to keep your protein balls gluten-free.
  • Creamy Peanut Butter: This helps bind the mixture while adding a little extra protein and healthy fats. Chunky peanut butter doesn’t work with this recipe! If needed, feel free to substitute creamy almond butter, cashew butter, or sunflower butter. Just keep in mind that the flavor will change slightly, depending on what you use.
  • Honey: This naturally sweetens the balls and helps them hold their shape. Maple syrup works well, but will give the balls a slightly different flavor.
  • Unflavored Collagen Peptides: These are optional, but I always include them for a boost of protein! Vanilla protein powder works well, too.
  • Hemp Hearts: These add fiber, a slightly crunchy texture, and extra nutrition.
  • Bee Pollen: This is optional but a great way to enhance the nutrients, especially if you’re prepping for postpartum!
  • Freeze-Dried Raspberries: These add a tart, fruity flavor without making the white chocolate protein balls too watery. I find them in the baking aisle of my local grocery store or online. If you can’t find raspberries, freeze-dried cranberries taste great, too.
  • White Chocolate Chips: I prefer to use mini white chocolate chips so I get morsels of chocolate in every bite. Chopped white chocolate works well, too. Or, substitute milk chocolate, dark chocolate, or semi-sweet chocolate if preferred.  Use dairy-free chocolate chips if needed!

How to Make Raspberry White Chocolate Protein Balls

  1. Grind the oats: Pulse the oats in a food processor or high-speed blender until they resemble a chunky oat flour. For smoother, more uniform balls, I like to process the oats more finely. However, more coarsely ground oats give the balls a slightly chewier texture that’s still delicious. You do you!
  2. Prepare the base: Transfer the ground oats to a large bowl, and add the remaining ingredients except the raspberries and white chocolate. Stir to combine.
  3. Add mix-ins: Fold in the freeze-dried raspberries and white chocolate.
  4. Portion: Divide the oat mixture into balls. I like to use a cookie scoop, but you can eyeball the portions and separate them with your hands. Either way, roll each portion between your palms to create a ball.
  5. Enjoy: Serve right away, or transfer the balls to the refrigerator to chill.

How to Store

Once assembled, these raspberry white chocolate protein balls will stay fresh in an airtight container in the freezer for up to 3 months. To serve, let them soften at room temperature for a few minutes. No need to thaw them overnight in the fridge!

Raspberry White Chocolate Protein Balls Recipe

These Raspberry White Chocolate Protein Balls are an easy, no-bake snack made with wholesome ingredients like oats, peanut butter, hemp hearts, and freeze-dried raspberries. A little white chocolate makes them feel like a treat, while optional collagen or protein powder gives them an extra boost of protein. Servings 12 servings
Prep Time 15 minutes
Chill Time 30 minutes
Total Time 45 minutes

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup natural peanut butter
  • 1/2 cup honey
  • 1-2 scoops unflavored collagen peptides or vanilla protein powder
  • 1/4 cup hemp hearts
  • 1 tablespoon bee pollen optional
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt or a generous pinch
  • 1/4 cup freeze-dried raspberries plus more as desired
  • 1/4 cup mini white chocolate chips or chopped white chocolate plus more as desired

Instructions

  • Grind the oats: Add the oats to a food processor or high-speed blender and pulse until they resemble a chunky oat flour. For smoother, more uniform protein balls, process the oats more finely. For more texture and noticeable pieces of oats, leave them a little chunkier.
  • Mix: Transfer the ground oats to a large bowl. Add the peanut butter, honey, collagen peptides or protein powder, hemp hearts, bee pollen, vanilla, and sea salt. Stir until thoroughly combined.
  • Add the mix-ins: Fold in the freeze-dried raspberries and white chocolate. Add a little extra of either if you want more raspberry or white chocolate in every bite.
  • Roll: Scoop out a heaping tablespoon of the mixture and roll it between your hands to form a ball. Repeat with the remaining mixture.
  • Chill and enjoy: Enjoy right away or refrigerate until chilled and firm.

Notes

Storage: Store the protein balls in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze them in an airtight container for up to 3 months. Let them sit at room temperature for a few minutes before enjoying.
Oat texture: How finely you grind the oats is completely up to you. Finely ground oats will create a smoother, more uniform texture, while coarsely ground oats will give the protein balls a little more chew.
Protein powder: Unflavored collagen peptides is my choice. Vanilla protein powder will also work here.
White chocolate: Mini white chocolate chips work especially well because you get a little chocolate throughout each ball, but a finely chopped white chocolate bar works just as well.
Freeze-dried raspberries: Feel free to add more than 1/4 cup if you want a stronger raspberry flavor.
