Healthy Avocado Boats

Avocados are already a fan-favorite food these days, but when you turn them into a vessel to hold other delicious food, it just takes it to a hold new level. These nutrient-dense avocado boats, with five different options for filling, will leave you so satisfied. Avocado boats make a great snack, or a meal and with so many different options for customizing them, they’ll be loved by everyone!

Why we Love Avocados

Avocados are packed with fiber and healthy fats! This means they help you feel full and satisfied longer by providing you with long-term energy. Avocados are rich in monounsaturated and polyunsaturated fats and are Avocados loaded with folate, vitamin K, vitamin E, vitamin C and B-vitamins, and potassium. These micronutrients and minerals help support an optimal immune system, are extremely important for pregnancy, and for your nervous system (aka mood swings, anxiety, etc).

Let’s Talk About the Filling Options

I’m sharing five different filling options for your avocado boats!

  1. Baked Egg Avocados
  2. Chicken Salad
  3. Turkey BLT
  4. Tuna Salad
  5. Bean and Pico de Gallo

What Type of Avocados to Buy

Look for avocados that are vibrant in color. They can vary between being green or dark brown, but skip out on any that have a lackluster lighter color. Also, look to make sure there is no visible mold on the top part of the avocado. A ripe avocado should be firm but will yield to gentle pressure when you press into the skin. Make sure that the skin feels tight up against the flesh inside of the avocado. If it feels like there may be a gap between the skin and the flesh, do not purchase it.

How to Ripen Avocados

If the store doesn’t have any perfectly ripe avocados, you can help the avocado ripen at home. Place the avocado in a brown paper bag with an apple for 2 to 3 days, until the skin will yield when you gently press into it. This works because apples naturally produce a gas that will help the avocados ripen quicker than if you just left them on the counter.

How to Make Avocado Boats

This recipe is a bit more of a guide than anything else. While we’re sharing specific recipes for what you can stuff your avocado boats with, at the minimum you just need to know a few tips and tricks for getting the most out of your avocado boats.

  1. Choose ripe avocados! This recipe isn’t going to work if the avocado is rock hard or if it’s too mushy.
  2. Slice the avocado in half and remove the pit. Scoop out a little bit of the avocado flesh to make room for the filling. Then, sprinkle the cut avocado with a little bit of lemon or lime juice and a sprinkle of salt before filling it. This helps season the avocado for the best taste.
  3. Fill the avocado with your favorite filling option. Do this just before serving, as avocados don’t last too long without turning brown.

Healthy Avocado Boats: 5 Ways

Ingredients

  • 1 large ripe avocado (or more, as many as need to make the number of servings you want)

Optional Fillings:

For Baked Egg

  • 2 eggs (or as many as you plan to make)
  • Squeeze of lime juice
  • Pinch of salt
  • Pinch of paper
  • Pinch of paprika

Chicken Salad

  • 1 small cooked chicken breast (about 5 ounces), diced finely
  • 3 tablespoons mayo
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Turkey BLT

  • 1/4 cup diced turkey breast
  • 1 piece of cooked bacon, diced
  • 1/4 cup diced tomato
  • 1/4 cup diced fresh spinach
  • ½ teaspoon lemon juice
  • Salt and pepper, to taste

Mayo Free Tuna Salad

  • ½ (5-ounce) can albacore or yellowfin tuna, drained
  • 1 tablespoon diced cucumber
  • 1 tablespoon diced red onion
  • 1 tablespoon diced red pepper
  • 1 tablespoon diced parsley
  • 1 teaspoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Pico de Gallo with Beans

  • 1/4 cup diced tomato
  • 2 tablespoons cooked and rinsed black beans
  • 1 tablespoon diced red onion
  • 1 tablespoon fresh cilantro chopped
  • 2 teaspoons diced jalapeño pepper
  • 1 teaspoon lime juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

For Baked Egg

  1. Preheat oven to 400ºF.
  2. Cut avocado in half and remove the pit. Scoop out a small portion of the avocado to make room for the egg.
  3. Squeeze a bit of lime juice on top of avocado and place in a baking dish, making sure the avocado halves are secure.
  4. Crack eggs into a bowl. Transfer yolk to the divet in the avocado, and add as much egg white as fits.
  5. Bake in the oven until the egg is cooked as desired, and the white is fully opaque, about 15 minutes.
  6. Sprinkle avocados with a pinch of salt, pepper and paprika and serve.

For Chicken Salad:

  1. Cut avocado in half and remove the pit.
  2. Add all chicken salad ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop chicken salad into the hole created from the pit. Set aside any additional chicken salad for another use.

Turkey BLT

  1. Cut avocado in half and remove the pit.
  2. Add all ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop the BLT ingredients into the hole created from the pit.
  4. Serve.

For Tuna Salad:

  1. Cut avocado in half and remove the pit.
  2. Add all tuna salad ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop tuna salad into the hole created from the pit. Set aside any additional tuna salad for another use.

For Pico de Gallo with Beans

  1. Cut avocado in half and remove the pit.
  2. Add all ingredients to a bowl and mix together. Add salt and pepper to taste.
  3. Scoop pico into the hole created from the pit. Set aside any additional pico for another use.
